Let’s just be honest and get this out right away, I LOVE carbs. LOVE LOVE LOVE THEM! They are my favorite thing.
My stomach does not love them, I can just look at bread and immediately it’s as if I ate it. I am constantly in a battle between trying to eat low-carb and enjoying my bowl of Cocoa Puffs. It’s such a hard battle.
I do have lots of tasty low-carb recipes though because most of the time, I truly am trying to eat low-carb. I’ve been in a holding pattern with my weight loss for a while now. One thing I’ve noticed though is when I lower the carbs, I lose weight.
It truly does have something to do with all those carbs…but goodness why do they have to be so good?
Honestly, I thought when I went gluten-free that I would lose weight because so many carbs are flour…that was until I realized I can make everything I love gluten-free. That backfired, didn’t it?

I can make all the foods I love that have carbs in a gluten-free version, so really weight loss when going gluten free isn’t always realistic at all.
I have learned though it’s all about balance. So if I am wanting some carbs, I add in a serving of brown rice or wild rice in a perfect portion size, not too much.
