How is summer going in your neck of the woods? Ours is 3 weeks from being almost over as the kids head back to school. I’m ready. I’ll admit it.
They need a break from each other and need some structured days again. It always seems to go this way too, the first couple of months are fine and by the end of summer, it’s time.
How do you make Blackened Chicken Caesar Salad?
We are all ready. In the meantime, I needed a little break this past week so I made some delicious Blackened Chicken Caesar Salads for lunch.
My mom happened to stop by with one of my nephews, so while the kids played we enjoyed a tasty lunch and some talking, which was a great way to refresh a bit and have an adult conversation.
I decided to make Blackened Chicken paired with a delicious salad. This has actually become one of my favorite lunches. I like to serve it with Caesar Vinaigrette, I think it’s a light and delicious dressing that really boost the flavor.
I typically make my own dressing too and just make a batch each week to have on hand. I did find some at the store though recently too that’s a great option as well.
I was able to make 4 Blackened Chicken Thighs, which allowed me to have enough for a week of salads or a salad for lunch and then paired with fresh produce for dinner.
I love to go out to the garden and pick fresh produce to use as side items for dinner. This was a great meal to do that with. We used garden fresh lettuce and tomatoes for our salads as well, lunchtime perfection!
This is certainly a go-to for me for lunch and dinner during busy weeks, plus it’s good for you too!

Blackened Chicken Caesar Salad
Ingredients
- 4 Forester Farmer's Market Chicken Thighs
- 2 Tbsp Cajun Season
- 1 Tbsp Rosemary
- Romaine Lettuce
- Tomato
- Shaved Parmesan
- Caesar Vinaigrette Dressing
Instructions
- Prepare the chicken, by coating both sides with the Cajun seasoning.
- Add the rosemary on one side of the chicken.
- Grill on medium-high heat on a cast iron grill or outdoor grill.
- Once done, slice and serve over a prepared salad with toppings.
- Drizzle with the Caesar Vinaigrette Dressing.

I typically use dried for this.
