The perfect way to enjoy a pizza is with these Zucchini Pizza Bites! They are perfect for back to school season.

It’s time! It’s back to school season for many of us, I know some have about another month to go but for us we are approaching our last weekend of summer break. Next week, I’ll be back to packing lunches each day for the kids and that also means that I have to get creative and mix it up for them or they get bored with their lunch.
I’m sure many of us would too if we had the same thing every single day. I decided to recreate a comfort style food for them but with a better for you twist using zucchini instead of pizza crust to make Zucchini Pizza Bites.
Zucchini Pizza Bites are all the rage right now especially as zucchini is also in season. These Zucchini Pizza Bites are one of the few ways that I can actually get my kids to gladly enjoy vegetables.
The key though in creating ours is seasoning it just right. I use Pompeian Extra Virgin Olive Oil Spray to coat the slice zucchini, then I top it with Garlic Salt before adding the toppings.
I love the spray because I can get just the right amount without brushing or using any other dishes, just a quick spray and they are ready to go. Not only that though it’s also cholesterol free and trans fat free too, it’s high in the good fats and low in the bad ones. It’s the perfect robust flavor for these Zucchini Pizza Bites.
Once I’ve sprayed and seasoned them, I top them with pizza sauce, cheese, and mini pepperoni’s. At this point though, use whichever toppings you prefer. I typically leave a few with just cheese for my daughter too.
After they are all ready to go, then it’s time to broil them in the oven for about 5 minutes until the cheese is melted and slightly browned. A few minutes of cooling and eat them up without guilt because they will taste like pizza with a vegetable twist!
These can be served warm; however, my kids actually enjoy them cooled so that makes them perfect for their lunchbox. I can easily add a few of these in as a main dish for their lunch with a few other items too. I even enjoy them for lunch as well too. Let’s face it sometimes I really like the lunches I make for the kids so much so that I have to have some too! It’s only fair, right?

Zucchini Pizza Bites
Ingredients
- 2 Zucchini Sliced in Rounds
- Pompeian Extra Virgin Olive Oil Spray
- Garlic Salt
- Pizza Sauce
- Shredded Italian Cheese
- Mini Pepperoni
Instructions
- Warm up the broiler on low.
- Place the sliced zucchini on a greased baking sheet.
- Spray the zucchini evenly with the olive oil spray.
- Evenly sprinkle a dash of garlic salt on each slice of zucchini.
- Top evenly with pizza sauce, cheese, and pepperoni.
- Place in the oven on broil for about 5 minutes or until the cheese is melted and slightly browned.
