Sweet Pepper Nachos are a better for you way to do nachos!
Have you ever had nachos without chips? Umm…no way! I am a nacho girl but I love my tortilla chips! Only, they are not always the healthiest thing on the planet, right? Well, leave it to my sister to get me hooked to Sweet Pepper Nachos!
She kept posting pictures of her nachos using sweet peppers to the point that I knew I had to make these and share them. Basically all you do is use a pound of sweet peppers, then you slice them up and place them in a cast iron skillet. Once they are in the skillet, I topped ours with shredded chicken and cheese. Then, I placed them under the broiler on high for just about 3 minutes to get the cheese melted and toasty. Once they were done, I topped them with my favorite nacho toppings.
Sound wonderful?
It is! Many of you are probably growing sweet peppers in your backyard garden this year, so why not make a beautiful dish like this for either an appetizer or a full meal? It’s much healthier than chips and it’s bursting with flavor. I love the flavor the sweet peppers give to the dish. It’s like a new element of sweet and spicy!
This one really needs no recipe though, simply pick up some sweet peppers and build your ultimate nacho platter.
