We stock our fridge with a variety of picnic salad recipes all summer long. My personal favorite is broccoli salad, but we also love a good pasta salad. These salads are perfect for lunches or as side dishes for summer parties. They are easy to make ahead, which is why I love them so much, plus they last several days in the fridge.

What are picnic salads?
Picnic Salads are cold salads that use lots of different vegetables, such as cucumbers for cucumber salad, carrots, corn for corn salad, along with other fresh ingredients like avocado, eggs, fresh cilantro, parsley, or basil. When I think of Picnic Salads, I think of fresh and colorful ingredients.
Cold Pasta Salads with vegetables added in like a classic pasta salad or Macaroni Salad, tend to be classics served at most picnics. These picnic salads are easy to serve to a crowd or have on hand when you get a craving!
How do you make these gluten-free?

Some salads will be naturally gluten-free, like most potato salads and broccoli salads; however, some salads need to be adapted to be made gluten-free.
This is the case for pasta salad; using gluten-free pasta will do the trick to make it gluten-free. Our favorite brand to use is Barilla Gluten-Free Pasta; it has a similar texture to traditional pasta and holds up well when chilled.
Making these pasta salads gluten-free is very simple, but always check all ingredients to be sure there is no cross-contamination.
Tips for Making Picnic Salads:

- Keep them cool – use a cooler and an airtight container to keep the salad cool during transport.
- Avoid Soggy Salads! If you are making a salad with leafy greens, add the dressing right before serving.
- Fork Friendly – It’s best to make sure the salad is chopped enough that you can easily eat it with a fork and no knife needed!
- Make Ahead – Picnic Salads are perfect to make ahead, they often taste better when chilled longer!

With the summer heat upon us now I’m all about refreshing fruit, pasta & potato salads for the season. My living room windows face west so I get the afternoon sun through evening and it’s so hot even with the air conditioner on. So I don’t use the oven much if at all during the summer. These refreshing salads are going to come in handy.
