We made it! Our kids are out of school and now I have a 1st and 5th grader. I was blogging and writing these menu plans when I only had a ONE-YEAR-OLD! Not two kids…but just ONE!
How is that even possible?
I wrote my very first menu plan on September 3rd, 2010. I know that probably only blows my mind, but honestly, it’s crazy! At that time I had really no plan for this website other than I needed to figure out how to cook.
That was my only plan. I can tell you I definitely figured that out.
That’s all I do…COOK! I can cook just about anything now and when I started this website I was lucky to be able to cook a box of macaroni.
I guess it’s good to see the growth and how far everything has come. I just can’t believe my kids are growing up so quickly either.

They keep reminding me of how old they are too. I know when I was a kid, it always felt like time just took forever and now as an adult it seems as it goes so fast I can’t even keep up.
As we head into summer, I’m really looking forward to just relaxing some.
I have been so fatigued lately, I’m actually going through some test to see what the cause is or if we can even figure it out.
I’m sure part of it is simply parenting and juggling everything. I still feel like I shouldn’t be THIS tired all the time, so there is that too.
I am hoping we get to the bottom of it and I can figure out what’s going on. I’m guessing it’s likely a vitamin deficiency of some sort and likely Vitamin D. This girl needs some sunshine.
Now enough about that, let’s get to this weekly menu plan!
What’s with the new format?
I am trying out a new way of posting the menu plan with a list, it will take you directly to the post with the recipe for each recipe.
I hope you enjoy this new format, I happen to love it, but I also want your feedback!
Be sure to share feedback with me if you love it or hate it!
