This upcoming weekend is the unofficial start to summer and that means lots of cookouts will be happening all weekend long, really all summer long.
We LOVE hosting cookouts and one of our all-time favorites to serve is Smoked Brisket. My husband is usually in charge of smoking the brisket, but we have been hosting our friends and family, plus serving up his smoked brisket for as long as we have been married.
Our housewarming gift from my parents when we moved into our first home was a smoker and grill combination. We literally used it until it was falling apart.
Last year we upgraded to a super nice smoker so now my husband basically could live outside and smoke meats every single day.
Of course, though when you enjoy smoking meats it’s also fun to come up with new ways to serve it too. We decided to use sliced smoked brisket and serve it on top of a Thomas’ English Muffin.
These are available at Walmart in the bread aisle. We added sweet coleslaw to the top of the brisket and some barbecue sauce to make the perfect sandwich.
Honestly, I feel like here in Oklahoma, all most everyone smokes meat on a regular basis. Our weather tends to stay pretty nice year-round but during the summer months, no one actually wants to turn on the oven.
If that’s you, this is the perfect alternative.
We also added a pool last summer, so we had even more hosting opportunities than we normally do. These Smoked Brisket Sandwiches with Coleslaw are a win for those pool parties.
All the adults and kids both love the Thomas’ English Muffins they are served on. It’s a nice little switch from a traditional bun.
Which Thomas’ English Muffin should you use for these sandwiches?
We decided to go with Thomas’ Original Nooks and Crannies English Muffins. These English muffins hold and absorb juices of foods really well, which just added to the flavor of the ingredients.

- Thomas’ Original Nooks and Crannies English Muffins
- Sliced Smoked Brisket
- Prepared Coleslaw
- Barbecue Sauce
Tips for making Smoked Brisket Sandwiches with Coleslaw:
Thomas’ English Muffins are already nearly cut for you, so simply use your fingers to gently separate the English muffin.
Once it’s separated, add a few slices of smoked brisket to the bottom. This can be chopped brisket as well; we simply prefer sliced for these.
After the brisket is on, top it with cold, crunchy coleslaw and then drizzle on some barbecue sauce. It’s best not to overload the sandwich, so do just enough to cover the English muffin.
These pair wonderfully with Air Fryer Potato Chips too.

Smoked Brisket Sandwiches with Coleslaw
Ingredients
- 1 Package Thomas’ Original Nooks and Crannies English Muffins
- 1 Pound Smoked Sliced Brisket
- 1 1/2 Cups Prepared Coleslaw
- 1/2 Cup Barbecue Sauce
Instructions
- 1. Using your fingers, separate the English muffins.
- 2. Place 2-3 slices of smoked brisket on the bottom of the muffin.
- 3. Top with about 1/4 cup coleslaw.
- 4. Drizzle with barbecue sauce and serve
