It’s packed with ground beef, creamy cheese, and a blend of vegetables. This tasty soup is not only simple to make but it’s the best comfort food on a busy weeknight.
How do you make this soup gluten-free?

The only swap that will be needed to make this gluten-free cheeseburger soup is to use gluten-free all-purpose flour for the roux. This needs to be a 1:1 ratio of flour. This means that it could be swapped out evenly with regular all-purpose flour.
The best brands to use are King Arthur Gluten-Free All-Purpose Flour, Better Batter, or Cup 4 Cup.

All other ingredients will be naturally gluten-free; however, always check ingredients before proceeding.
What potatoes should you use for Cheeseburger Soup?

Yukon Gold Potatoes work the best for this soup just as they did for this Slow Cooker Potato Soup, because they have a wonderful, rich, buttery flavor and a smooth texture.
Russet Potatoes will work as well if you have those on hand, but Yukon Gold do work the best.
Tips for Making Gluten-Free Slow Cooker Cheeseburger Soup:

We used cubed cheese for this recipe; however, you can also shred the cheese. It’s best to buy the block of cheese and then shred it yourself as the pre-shredded cheese has additivies to avoid melting. When making this soup, you will want the cheese to melt.
This recipe is easy to customize with additional ingredients. For instance, when cooking the ground beef, diced onions can also be added in.

In regards to the ground beef, it can be cooked in advance and stored in the refrigerator until you are ready to add it to the soup or you can cook it about 30 minutes before adding it, this is totally up to your preference.
This soup is great to serve with a crusty gluten-free bread or gluten-free croutons.

Variations of Slow Cooker Cheeseburger Soup:

- Make it Spicy – Add a pinch of cayenne pepper to the ground beef or use spicy cheese.
- Make it Kid-Friendly – Use cheddar or American cheese and serve with bacon strips on top.
- Make it Deluxe – Make is a Swiss cheese soup with Swiss cheese and add in carmelized onions and mushrooms.
How do you store leftovers?
Once the soup has fully cooled, store the leftovers in an airtight container in the refrigerator for up to 4 days.
When ready to serve, rewarm on the stove in a saucepan or in the microwave for 1-2 minutes using a microwave-safe dish.

Gluten-Free Slow Cooker Cheeseburger Soup
Ingredients
- 4 Cups Golden Potatoes (Cleaned, Peeled, and Diced)
- 1/2 Cup Chopped Red Onions
- 1/2 Cup Shredded Carrots
- 2 Tsp Italian Seasoning
- 1 Tsp Dried Parsley
- 3 1/2 Cups Chicken Broth
- 1 Pound Ground Beef
- 1 Tsp Salt
- 1 Tsp Paprika
- 1/2 Tsp Ground Pepper
- 8 Tbsp Salted Butter (Divided – 2 Tbsp for Ground Beef, 6 Tbsp for Roux)
- 1/4 Cup Gluten-Free All-Purpose Flour or Regular Flour
- 2 Cups Milk
- 1 1/2 Cups Cubed Colby Jack Cheese
- 6 Strips Cooked Bacon (Chopped into Pieces)
Instructions
- Add the potatoes, chopped onions, shredded carrots, Italian seasoning, dried parsley, and chicken broth to a 6-quart slow cooker.
- Mix up all ingredients. Cover and Cook on HIGH for 3-4 hours. The potatoes should have an internal temperature of 195°F or higher to be tender.
Cooking the Ground Beef
- 30 minutes before serving, add 2 tbsp of butter if using a non-stick pan, ground beef, salt, paprika, and pepper to the skillet.
- Use a heat-proof spoon to break the ground beef into small pieces, cook until the beef is no longer pink, and set aside.
Making the Roux
- In a small saucepan, melt 6 tablespoons of butter.
- Add the flour and whisk to create a thick paste.
- Pour in the milk and continue to whisk.
- Bring to a simmer and cook for 4-5 minutes or until desired thickness.
- Add the roux to the potatoes in the slow cooker.
- Add in the cooked ground beef, cheese, and chopped bacon.
- Mix well and cover for 15-20 minutes or until cheese is fully melted.
- Serve and Enjoy!
Notes
- If preferred, cook the ground beef in advance and store it in a freezer-safe bag in the fridge until ready to add to the slow cooker.
- Store in an airtight container once the soup is fully cooled in the refrigerator for 3-4 days. Rewarm in the microwave.
