Instructions
Add the potatoes, chopped onions, shredded carrots, Italian seasoning, dried parsley, and chicken broth to a 6-quart slow cooker.
Mix up all ingredients. Cover and Cook on HIGH for 3-4 hours. The potatoes should have an internal temperature of 195°F or higher to be tender.
Cooking the Ground Beef
30 minutes before serving, add 2 tbsp of butter if using a non-stick pan, ground beef, salt, paprika, and pepper to the skillet.
Use a heat-proof spoon to break the ground beef into small pieces, cook until the beef is no longer pink, and set aside.
Making the Roux
In a small saucepan, melt 6 tablespoons of butter.
Add the flour and whisk to create a thick paste.
Pour in the milk and continue to whisk.
Bring to a simmer and cook for 4-5 minutes or until desired thickness.
Add the roux to the potatoes in the slow cooker.
Add in the cooked ground beef, cheese, and chopped bacon.
Mix well and cover for 15-20 minutes or until cheese is fully melted.
Serve and Enjoy!
Notes
If preferred, cook the ground beef in advance and store it in a freezer-safe bag in the fridge until ready to add to the slow cooker.
Store in an airtight container once the soup is fully cooled in the refrigerator for 3-4 days. Rewarm in the microwave.
