What ingredients do you need for Slow Cooker Beef Taco Soup?

- Ground Beef
- Taco Seasoning (Store-Bought or 2 Tbsp Homemade)
- Black Beans
- Diced Tomatoes
- Beef Broth
- Corn
- Water
- Cayenne Pepper (Optional – to make spicy!)
- Optional Ingredients for Serving – Doritos, Fritos, Tortilla Chips, Sour Cream, Cilantro, Shredded Cheese, Etc.
We LOVE to serve this soup with Doritos. We went many years always using Fritos, but Doritos take it to a new level, they add a wonderful crunch plus cheese too!
Tips for Making this Easy Slow Cooker Soup Recipe:

The ground beef can be prepped ahead as well, for instance, we will cook an extra pound of ground beef and then store it in a freezer-safe storage bag in the freezer. When we make this soup, I let it defrost for about an hour and then toss it into the slow cooker.

Most of these ingredients are also naturally gluten-free; however, ALWAYS check all ingredients before using. I always use either homemade taco seasoning or gluten-free taco seasoning, which is readily available at the local grocery store or Walmart.
The amount of broth in this recipe is just enough to be a nice cross between chili and soup; however, if you want more broth add additional water or beef broth.

When making this recipe, it will only be as spicy as your taco seasoning, so if you are a person who prefers spicy soups, be sure to add cayenne pepper to your taste preference.
Variations of Taco Soup:
Taco Soup can also be made as Chicken Taco Soup. If you want to make this with chicken, use chicken broth instead of beef broth, and use cooked and shredded chicken instead of ground beef.
For a quick dinner, use shredded rotisserie chicken or leftover rotisserie chicken. This works wonderfully with this soup!
How do you store leftover Slow Cooker Beef Taco Soup?

This soup needs to be fully cooled before storing. Once fully cooled, place in an airtight storage container.
When ready to serve, add a portion to a microwave-safe bowl and heat cover for 1-2 minutes in the microwave. Alternatively, you can also reheat this on the stove in a saucepan on medium heat.
Freezer Taco Soup Prep Instructions:
To prep this Taco Soup as a freezer meal, start by browning the ground beef and draining the fat. Once the meat has cooled completely, add it to a heavy-duty, gallon-sized freezer bag along with all of the remaining ingredients, such as the canned beans, corn, diced tomatoes, and green chilies (keep the juices in for extra flavor!). Pour in the beef broth and sprinkle the taco seasoning mix directly into the bag.
Squeeze out as much air as possible to prevent freezer burn, seal it tightly, and freeze flat for up to 3 months.
When you’re ready for a stress-free dinner, thaw the freezer bag in the refrigerator overnight. On cooking day, simply dump the entire contents of the bag into your 6-quart slow cooker.
Cover and cook on low for 6–8 hours or on high for 3–4 hours.

Slow Cooker Beef Taco Soup Freezer Meal
Ingredients
- 1 lb Ground Beef
- 1 Taco Seasoning Packet or Gluten Free Taco Seasoning Packet
- 15 oz Can of Black Beans Drained
- 14.5 oz Can of Diced Tomatoes
- 14.5 oz Can of Beef Broth
- 1 Cup Corn
- 1 Cup Water
- Dash of Cayenne Pepper
Serving Suggestions (Optional)
- Tortilla Chips
- Doritos
- Sour Cream
- Cilantro
- Shredded Cheddar Cheese
Instructions
- Using a medium-sized skillet, on medium-high heat, brown and drain the ground beef.
- Once the ground beef is drained, add it to a 6-quart slow cooker.
- Add taco seasoning, black beans, diced tomatoes, beef broth, corn, and water to slow cooker.
- If you prefer your soup to be spicy add in cayenne pepper.
- Mix well to combine the ingredients.
- Cover and cook on low for 8 hours.
- Serve with tortilla chips or Doritos.

I LOVE the name of your blog!! My mother was a consummate cook – she LOVED being in the kitchen, being a homemaker. I simply did not inherit that gene. But, there are dishes I enjoy cooking, especially if they’re easy and full of flavor. This looks like it could be one of them.

What if you cook it on high, would it be 3 hours? I want to make this but have 3-4 hours for cooking.. how would i do it?

I would say if you do high it would be 1/2 the time, you’d probably want to keep a closer eye on it. However, since your meat will already be cooked then it shouldn’t be a problem.
