This soup is so simple using several canned ingredients, which makes it very frugal too! I also like to precook my ground beef and have it seasoned and ready to go in the freezer.
This way I can just toss the cooked meat in with the canned goods and let the slow cooker do all the work!
I actually shared this recipe way back in 2010. This was one of the first recipes that I shared shortly after starting this website. I decided to freshen it up a bit with a few new pictures but even all these years later, we eat this regularly.
Tips to Make Slow Cooker Beef Taco Soup
A few notes on making slow cooker beef taco soup, these ingredients do not have to be drained.
That’s a common question for me with this soup; however, it just all mixes together, so there really is no need to drain anything.
In saying that though, there is also no harm if you prefer to drain the products, it will taste just the same either way.
I also think it works the best with a lean ground beef, be sure to drain it first before adding it to the slow cooker.
What should you serve with Slow Cooker Beef Taco Soup?
When I first shared this recipe, we always used corn chips; however, I have since changed to Doritos.
They are by far the BEST with Slow Cooker Beef Taco Soup. The cheese chips just work perfectly with it and they are great for dipping too.

Of course, corn chips still work too if you prefer those. We actually like the scoops corn chips because they make it easy to scoop it up and eat it. A great crunchy mix.

Can you freeze Slow Cooker Beef Taco Soup?
YES!
We freeze the leftovers, then I just warm them up in the slow cooker again the next time I want to serve it for about 2-4 hours until it’s nice and warm.
It can also be warmed up in the microwave. Now that we have 2 older kids and originally when I posted this, we only had a baby…we rarely have leftovers.
When we do though, we always freeze them. Just be sure to use freezer safe storage.
Another idea here is that you can prepare all the ingredients ahead of time too and have it in a freezer safe bag. One it’s time for taco soup, dump the ingredients in the slow cooker and cook it up!
Now it’s time to eat up!

Slow Cooker Beef Taco Soup
Slow Cooker Beef Taco Soup
Ingredients
- 1 lb Ground Beef
- 1 Taco Seasoning Packet or Gluten Free Taco Seasoning Packet
- 1 15 oz Can of Black Beans Drained
- 1 14.5 oz Can of Diced Tomatoes
- 1 14.5 oz Can of Beef Broth
- 1 Cup Corn
- 1 Cup of Water
- Dash of Cayenne Pepper
Instructions
- In a skillet brown the meat and add in the taco seasoning as instructed on the package.
- Once the meat is browned, add the meat and all ingredients to the slow cooker.
- Cook on low for 8 hours.

I LOVE the name of your blog!! My mother was a consummate cook – she LOVED being in the kitchen, being a homemaker. I simply did not inherit that gene. But, there are dishes I enjoy cooking, especially if they’re easy and full of flavor. This looks like it could be one of them.
What if you cook it on high, would it be 3 hours? I want to make this but have 3-4 hours for cooking.. how would i do it?
I would say if you do high it would be 1/2 the time, you’d probably want to keep a closer eye on it. However, since your meat will already be cooked then it shouldn’t be a problem.
