Let’s just face it and say that sometimes dinner is really hard to get on the table. I always feel like supermom when I can get all the things done in a day that I get done, plus get dinner on the table. I’ll just keep it my little secret that dinner can actually be a breeze if you plan right.
Most nights for us, we are super busy. I’m sure that’s the case for you all as well?
I remember when my kids were toddlers feeling like dinner time was hard because it was usually right around them getting cranky for bedtime, needing baths, and things like that.
We are in a new season now with both kids in school and my world has changed yet again. Now, dinner time is hard because we are barely getting in the door just to do homework, change, and head back out to another activity.
It honestly makes me miss the toddler years sometimes when we weren’t constantly on the go.
It’s so interesting with kids how the seasons are always changing, I’m realizing that more and more. Our son is about to be entering the pre-teen years. We are only a year away from middle school, and I feel like I just had him yesterday. I’m just getting used to the season we are in and the next thing I know, it’s changing again.
That’s just all the more reason to want to make some quick, easy meals so that I can spend as much time with them as possible.

Tips for Making Instant Pot Tangy Meatballs
This recipe makes enough to make 2 batches of Instant Pot Tangy Meatballs. We typically will freeze one batch and reheat them later; however, it’s a great recipe for leftovers throughout the week too.
They can easily be reused for meatball subs or spaghetti as well.
If you prefer for them to be browned, simply use the saute function on the Instant Pot to brown them on all sides before cooking. This is not necessary though and is more based on preference rather than necessity. We typically will just put them in the Instant Pot raw, cook them for 12 minutes and serve.
The tangy sauce is our favorite sauce that we use regularly; however, you can substitute it for barbecue sauce as well.
