I am finding more and more that using my Instant Pot is my go-to for soups. It’s so much faster than waiting on them to slow cook all day, plus most of the time I forget to put the soup in the slow cooker.
Maybe that’s more of my issue than needing it to cook quickly? This Instant Pot Chicken Taco Soup is one of my all time favorites.

Make Instant Pot Chicken Taco Soup!
Sometimes it’s easy to use a taco seasoning packet, but I also love to make it myself too. This homemade taco seasoning is one we use regularly. Of course, needing gluten free, sometimes it’s easier to just make it myself, plus I almost always have everything I need on hand.
That means even when it’s a last minute dinner decision, I can easily make a delicious Instant Pot Chicken Taco Soup in minutes!
The hardest part about using the Instant Pot for me is just waiting on that pressure to build. Once it builds, this soup only takes 4 minutes! I find that typically will equate to maybe 20 minutes between waiting on it to build, and then cooking.
How do you make Instant Pot Chicken Taco Soup?
I have found though it’s easy to put it together, help the kids get situated after school and come back and it’s ready go to.
I can even prep it earlier too, so that it’s ready to just set it and go when we get home from school. I have to admit that prepping ahead literally saves my sanity.
What is it about after school, the kids just seem to fall apart! Of course, I’m sure it’s just being tired partially, but it’s time for homework too.
I have to admit now that I’m a parent, I really HATE homework. I think of it this way, when I go to work for 8 hours, I don’t want to bring my work home.
Who wants to do that even as an adult?
Why should a child go to school for 6-8 hours, and then have to come home and do more work? Sometimes for older kids it’s HOURS of homework?
I really want someone to explain this to me because I absolutely hate it and see no point in it at all. Kids should be able to be kids too, not just do work all day long…just as an adult, I would want time to do stuff I love, not work all day long.
That’s my issue I guess, but it really bothers me sometimes. I am sure too as my kids get older, the homework will only get more and more.

Instant Pot Chicken Taco Soup
Ingredients
- 2 Cups Shredded Rotisserie Chicken
- 1 Taco Seasoning Packet or Gluten Free Taco Seasoning Packet
- 1 15 oz Can of Black Beans
- 1 14.5 oz Can of Diced Tomatoes
- 1 14.5 oz Can of Chicken Broth
- 1 15.25 oz Can of No Salt Added Canned Corn
- 1 Cup of Water
- Dash of Cayenne Pepper
Toppings:
- Fritos/Doritos
- Shredded Mexican Style Cheese
Instructions
- Add all the ingredients for the soup into the Instant Pot.
- Seal the lid and close the nozzle to prevent the steam from coming out.
- Set to high pressure, manual for 4 minutes.
- Let it cook.
- Quick release the steam once it's done.
- Serve with toppings.
