Get ready for a weekly menu plan with lots of new recipes this week!
So it’s nearly the middle of February? Anyone else feel like the time is flying by? We are counting down to our big vacation in the coming weeks. I’ll admit that I’m getting just as excited as our kids.
Although at the same time I feel like I still have a hundred things to do before we actually go. It’s amazing how much energy it takes to prepare to go on vacation where you are supposed to actually be relaxing. Isn’t it?
I am sure it’ll take a bit to get back into the groove of things after too, but that doesn’t change the fact we are all excited. In the midst of that though, the menu plan still needs to be done.
This week I’m really using the slow cooker and air fryer a lot to get on track with dinner. We’ve been swamped with activities this past month and honestly, I’ve just been so tired when it’s time to make dinner.
We’ve had more bowls of cereal and sandwiches than I care to admit lately. Of course, my kids are more than happy to eat that for dinner, but I’m back on track…so we are eating good meals!

This week I am going to try to use up our leftovers too. We do that a lot simply by having it for lunch the next day.
Typically that’s how we end up using up leftovers. It’s easy to do when you work from home; however, I know for my husband that’s a little bit harder when he doesn’t always have access to a microwave.
