This easy side dish is perfect to serve for an upcoming holiday dinner or alongside Pellet Grill Steaks, it’s full of flavor and low-carb too!
Brussels Sprouts aren’t always everyone’s favorite vegetable, but when prepared correctly they can be a delicious vegetable with so much flavor.
How do you prepare Brussels Sprouts?
For best results, the Brussels Sprouts should be washed and then sliced in half.
While washing the Brussels Sprouts, go ahead and remove any loose leaves or outer leaves that may not look as great as they should for serving.
About a pound of Brussels Sprouts can easily feed 6-8 people.
Once they have been washed and cleaned, plus cut, set the Brussels Sprouts aside while preparing the pan.
What pan should you use for Smoked Brussels Sprouts?
The best pan to cook these with is a cast iron skillet, typically about 12 inches.
Other alternatives that can also be used are a disposable aluminum pan, cast iron pan, baking sheet, or grill pan. The key is that it needs to be able to handle high-heat grilling. Cast Iron works well for this.
While a grill basket could be used, the oil will leak down in the grates, so it’s best to avoid a grill basket for this.
What kind of pellets should you use?
Hickory Wood Chips or Apple Wood Chips work well for this recipe. Personally, we always like to use a blend of pellets that give off a variety of flavors.
Remember that the wood flavors will directly impact the smoke flavor of your foods.
Tips for Making Pellet Grill Smoked Brussels Sprouts:
This delicious side dish uses simple ingredients!
This recipe will use cooked bacon. The bacon can be prepared in whichever way you prefer or for extra smoky flavor, use this Pellet Grill Bacon recipe.
The bacon should be cooked and then diced or cut into smaller chunks. Bacon Bits could be used as well; however, we prefer larger chunks of bacon in ours.
The first step will be to preheat your pellet grill or smoker to 225 degrees F.
While this is preheating, use a cast iron skillet and add about half of the olive oil to the pan, grapeseed oil can be used for a higher smoke point as well.
Once the olive oil is in the pan, move the pan from side to side to fully coat it with oil. Add in the prepared Brussels Sprouts, Diced Onion, and Chopped Bacon.
Then, evenly coat it with Italian Seasoning and Garlic Salt. Additional Kosher Salt can be added before serving or the sprouts can be drizzled with Balsamic Vinegar.
Once it’s fully prepared, place the entire cast iron skillet on the grill grates of the pellet grill or smoker.
Close the lid and cook for a full hour or until soft. If the temperature of your smoker varies, the pan may need to be rotated to evenly cook.
It’s best to stir the seasoned Brussels Sprouts at least once during the cooking time to make sure they evenly cook.
Black Pepper, Salt, or your favorite BBQ seasonings can be added just before serving.
How do you store leftover Brussels Sprouts?
The best way to store leftovers is in an airtight container in the refrigerator for up to 3 days.
When ready to reheat, use a microwave-safe dish and heat up for 1 minute or less.

Pellet Grill Smoked Brussels Sprouts
Ingredients
- 1 Tbsp Grapeseed Oil or Olive Oil, Divided
- 1 Pound Brussels Sprouts
- 1/4 Cup Diced Sweet Onion
- 1/2 Pound Cooked and Crumbled Bacon
- 1 Tbsp Italian Seasoning
- 1 tsp Garlic Salt or to Taste
Instructions
- Preheat the grill to 225°F.
- Using a 12-inch cast iron skillet, add 1/2 Tbsp oil to the bottom of the pan and swirl the skillet around to coat it with the oil.
- Clean and half the Brussels sprouts and add them to the pan along with the diced onion.
- Add in the cooked bacon and sprinkle with Italian seasoning and garlic salt.
- Mix in the additional oil.
- Place the cast iron dish on the pellet grill and smoke at 225°F for 1 hour. Stir at least once throughout the cooking time.
- Stir again before serving.
- Serve.
