Make these tasty and easy Pellet Grill Cornish Hens on your Pellet Grill, but you can also use a charcoal or gas grill!
Are you ready to try another tasty recipe on your pellet grill? These Cornish Hens are made very similarly to this Pellet Grill Rotisserie Chicken.
If you have a rotisserie attachment for your pellet grill, you can use it for these hens or opt for a basket, which we used for this recipe.
How long does it take to smoke a cornish hen?
This recipe is done by cooking the cornish hens at 375*F for just about 1 hour until they reach at least 165*F.
It’s best to have a meat thermometer on hand at all times to be able to keep track of the temperature with or a probe that would come with the grill.
These can also be cooked at a lower temperature around 225*F but the cooking time would then increase to about 2 hours.
What should you season cornish hens with?
Cornish hens are easy to season with any seasoning you prefer. We typically will use Lemon Pepper Seasoning or Weber Kick’n Chicken Seasoning.
If you want to marinate these, you can do that as well with this Chicken Marinade.
These are very easy to mix up with your favorite seasonings.
Tips for Making Pellet Grill Cornish Hens:
These can be made with any pellets that you prefer; however, we typically use a variety of pellets.
They can also be made similarly on a charcoal or gas grill too. As mentioned above, simply keep a meat thermometer on hand to check the internal temperature throughout the cooking time.
These pair wonderfully with grilled corn on the cob which can be made at the same time.

Pellet Grill Cornish Hens
Ingredients
- 2 1-1.5lb Cornish Hens (Thawed)
- No-Salt Added Lemon Pepper Seasoning
- Grapeseed Oil Spray
Instructions
- Warm up the pellet grill per the manual for your pellet grill to 375*F.
- Begin by preparing the cornish hens, pat them completely dry and use the seasoning and rub it over them evenly. Remove the giblet if needed too.
- Using the seasoning, make sure that it’s evenly rubbed over the hens, we use the No-Salt Added Lemon Pepper Seasoning from Mrs. Dash.
- Carefully place them breast side down directly on the grates of the pellet grill or in a grill basket.
- Coat the hens with grapeseed oil spray and cook at 375*F for 60+ minutes until the internal tempearture reaches at least 165*F.
- If you prefer, you can carefully rotate them after 30 minutes of cook time.
- Carefully remove and let rest for 10 minutes then cut and serve.
