Are most weeknights hectic for you? I know many are in baseball season right now among various other activities that we all seem to stay pretty occupied at. I have to say though, I think among all the activities to keep us busy, being around the table with family at dinner time is probably the most important of all. I always longed for that as a kid, I just wanted our family to sit down at the table and have dinner together. My parents had opposite shifts at work and that really only happened on holidays. Now, with a family of my own, I make it a point that we all sit down for dinner around the table at least a few times a week. This Tuscan Chicken Pasta Bowl is a crowd pleaser too. I decided to make the chicken in a skillet with Italian dressing and seasonings. While the chicken is cooking, simply make the pasta as instructed and add in the sauce. Then, serve the chicken over the pasta and top with shaved Parmesan. We served it with a salad for a complete meal. I think this one is perfect for an at-home date night too!
A few weeks back now, we had quite an event at our house. I had a funny smell coming from our cabinet that was hidden under the bar stools in our kitchen. I checked and checked but found nothing. Then, one day I looked into this hidden cabinet, guess what I found? I found WEEKS worth of food! I mean WEEKS! It was all half eaten food. What? That’s right, my kids had been hiding their dinner. I will admit that I had to take a few steps back and breathe after I saw that. Can you imagine what could have found it’s way to that cabinet? Thankfully, we were in the clear, but I spent a good hour or more cleaning it out and airing it out to rid the smell. Then, I had to have a talk with my kids about why food belongs in our bellies or in the trash can and not inside a hidden cabinet. This has really made me think about serving them more foods that they really LOVE instead of just forcing them to eat things that they are not a big fan of. Now, thankfully my kids LOVE pasta, so I can easily serve this up and be guaranteed I wouldn’t find it hiding inside the cabinet later.

Tuscan Chicken Pasta Bowl
Ingredients
- 16 oz Barilla Penne Pasta
- 24 oz RAGÚ Garden Combination Sauce
- 6 Boneless Skinless Chicken Thighs
- 1/2 Cup Italian Dressing
- 1/2 Tbsp Dried Rosemary
- 1/2 Tbsp Dried Basil
- 1 Clove Garlic
- Shaved Parmesan
Instructions
- About 4-8 hours before cooking, combine the dressing, rosemary, basil, and garlic then coat the chicken on both sides. Let this marinate for a few hours.
- When ready to cook, prepare the pasta as instructed on the package. Once it's drained, add in the sauce and mix well.
- In a medium-sized skillet, spray it with nonstick cooking spray and cook on both sides for about 6 minutes or until the internal temperature of the chicken is 165*.
- Serve the chicken over the pasta and top with shaved Parmesan.
