Tater Tot Hot Dish is a classic casserole recipe that has been around for years, but this twist adds a little Mexican flavor by creating Tater Tot Taco Casserole.
This taco tater tot casserole recipe uses easy, pantry-style ingredients to create a delicious dish the whole family will enjoy, plus it’s a one-dish dinner.
What do you need for a Tater Tot Taco Casserole?
A few simple ingredients are needed to make this casserole.
- Ground Beef or Ground Turkey
- Gluten-Free Taco Seasoning
- Canned Black Beans
- Canned Corn
- Tomato Sauce
- Tater Tots
- Shredded Mexican Cheese
Other items to serve the casserole can be included such as salsa, guacamole, sour cream, tomatoes, cilantro, or bell peppers. There are a variety of variations that you can add to this dish to customize it to your liking.
What type of tater tots should you use to make this gluten-free?
Be sure when choosing the tater tots to get a gluten-free brand, such as Ore-Ida. Be sure to read the ingredients fully, from experience many generic brands are not gluten-free such as the Great Value Brand. That means it’s very important to read the ingredients carefully.
What taco seasoning mix should you use?
Either homemade taco seasoning or store-bought will work for this recipe. Gluten-free store-bought taco seasoning packet is easy to find at Walmart and your local grocery store.
If you use store-bought, use the entire package with the ground beef. If you are making homemade taco seasoning use about 2 tablespoons.
Tips for Making Tater Tot Taco Casserole:
Begin by preheating the oven to 400 degrees F.
In a large skillet, begin to brown the meat. Once browned, drain and return to the skillet. At this point, combine the ground beef with the taco seasoning per the instructions on the package, or if using homemade use the homemade mix and about 1/4 cup of water. Let this simmer until cooked through.
After the ground beef mixture is prepared, add the corn, beans, and tomato sauce to it.
This mixture will be added in a single layer to a 9×13 baking dish, be sure the baking dish is coated with nonstick spray before adding the mixture.
Finally in a single layer, evenly top the dish with tater tots.
This casserole will bake for 20 minutes before being removed to sprinkle a Mexican cheese blend on top, then place it back in the oven for 5 minutes to fully melt.
How do you store leftover casserole?
Store the leftover casserole in an airtight container in the refrigerator for up to 3 days.
When ready to serve, place portion on a microwave-safe dish and heat for 1-2 minutes before serving.
This makes for a perfect one-dish weeknight dinner and the entire family will enjoy it! We always have plenty of leftovers to serve the next day too!
Tater Tot Taco Casserole
Ingredients
- 1 Lb Lean Ground Beef
- 2 Tbsp Gluten Free Taco Seasoning or 1 Package
- 1 1/2 Cups Canned Black Beans Drained
- 1 1/2 Cups Corn Drained
- 16 oz Tomato Sauce
- 1 1/2 Lbs Tater Tots
- 1 Cup Shredded Mexican Style Cheese
Instructions
- Preheat the oven to 400°F.
- Brown the ground beef, drain, and combine with the taco mix as instructed on the package or seasoning mix.
- Once the beef is mixed with the seasoning and cooked, add in the beans, corn, and tomato sauce.
- Mix this well then evenly pour into a greased 9×13 baking dish.
- Place the tater tots evenly across the top of the meat mixture.
- Bake for 20 minutes or until nearly cooked.
- Remove carefully, add the cheese on top and bake for an additional 5 minutes.
- Serve.
