Are you looking for a delicious way to serve veggies? Then this Roasted Radish Salad is a must try! I’m sharing this recipe in partnership with The Produce Gathering, all thoughts and opinions are my own.
Do you have a local produce co-op in your area? My sister runs a local produce co-op in our area here in Broken Arrow, Oklahoma, The Produce Gathering. This particular co-op is open every other week and she sells bundles of delicious produce along with lots of local, organic meats, honey, nuts, and more. Just a side note, if you decide to sign up and see what it’s all about use the code MHCMember for your FREE lifetime membership to the co-op. This will allow you to view what is offered and order as well.
The real ‘surprise’ of the co-op is that you never know what will be in your produce basket until you pick it up. That always means it’s a challenge then to figure out just how to use those delicious vegetables because sometimes we receive some that I do not use on a regular basis.
This is likely my favorite part because then we get to try out new produce and expand our taste! One thing that I wanted to try this week was roasted radishes. My husband is not a radish fan at all, but I just knew that if I could get this right and roast them, he would love them.
Sure enough I was right. When am I not though? Just kidding!
I roasted the radishes along with sliced zucchini and yellow squash. It’s so simple to do this, all you need is a little bit of olive oil and either crushed garlic and sea salt or garlic salt.
I let them warm up in the oven for about 30 minutes, but you can always leave them in longer as well until they are a little bit crispy on the edges. One bite and it just melted in my mouth! When veggies are roasted, I can just eat them like candy…they are that good. Earth’s candy, right?!
Now it’s time for a bite or two, but first head over to The Produce Gathering to pick up your basket of produce and lots of extras! Remember the sale is open now until tomorrow evening the 8th, so make sure to order soon. Be sure to use the code MHCMember so you can get $10 off the membership, that makes it FREE for you to sign up!
