The real ‘surprise’ of the co-op is that you never know what will be in your produce basket until you pick it up. That always means it’s a challenge then to figure out just how to use those delicious vegetables because sometimes we receive some that I do not use on a regular basis.
This is likely my favorite part because then we get to try out new produce and expand our taste! One thing that I wanted to try this week was roasted radishes. My husband is not a radish fan at all, but I just knew that if I could get this right and roast them, he would love them.
Sure enough I was right. When am I not though? Just kidding!
I roasted the radishes along with sliced zucchini and yellow squash. It’s so simple to do this, all you need is a little bit of olive oil and either crushed garlic and sea salt or garlic salt.
I let them warm up in the oven for about 30 minutes, but you can always leave them in longer as well until they are a little bit crispy on the edges. One bite and it just melted in my mouth! When veggies are roasted, I can just eat them like candy…they are that good. Earth’s candy, right?!

Roasted Radish Salad
Ingredients
- 1 Zucchini Sliced
- 1 Yellow Squash Sliced
- 10 Radishes Quartered
- 1 Garlic Clove Crushed
- 1/2 Tsp Sea Salt or to Taste
- 1/2 Tbsp Olive Oil
Instructions
- Preheat oven to 350*.
- Add the zucchini, squash, and radishes in a medium sized bowl.
- Mix in the garlic, sea salt, and olive oil.
- Spread evenly on a greased baking sheet.
- Bake for 20-30 minutes or until soft. Check on it half way through the bake time and stir.
