Are you a grapefruit fan? What about Sweet Scartletts? My husband absolutely LOVES grapefruit. He’s the type that loves to eat it in the morning for breakfast topped with a little bit of cinnamon. These beautiful Sweet Scartletts are grown in South Texas, then packaged and put on store shelves near you. We love buying the 5 lb bag which typically last us a week or so. Not only do we love eating them as is but also adding them to smoothies or even fresh squeezed grapefruit juice.
This past week though I decided to branch out and try this Grapefruit Salsa Chicken, we grilled up delicious chicken then topped it with a mixture of seared grapefruit with sweet onion. It’s a strong taste but delicious too. It can be mixed with your favorite flavors too. I added a bit of parsley to ours but I’ve also seen it done with lemon and cilantro too. It gives the chicken a bit of zing. I decided to simply season the chicken with just a dash of salt and pepper, then topping it with the Grapefruit Salsa was the icing on the cake! It was all natural sweetness that made dinner scrumptious!
Along with enjoying this delicious dish, it has been so nice here in Oklahoma that we were able to fire up the grill and get outside to grill the chicken too. It has been nearing 80 degrees or more! I’m not sure where winter is, but it hasn’t showed up here yet! This may be the first year in ages we haven’t seen much snow.

Grapefruit Salsa Chicken
Ingredients
- 4 6 oz Boneless Skinless Chicken Breast
- Salt to Taste
- Pepper to Taste
- 1/2 Tbsp Olive Oil
- 2 Grapefruits Pealed & Pulled Apart
- 1/2 Cup Sweet Onion Diced
- Fresh Parsley
Instructions
- Season the chicken with salt and pepper and evenly grill on both sides until the internal temperature reaches 165* or until well done.
- In a medium sized skillet, add in the olive oil.
- Warm up the oil and add in the grapefruit and onion.
- Saute for 5-10 minutes until the onion is fully cooked.
- Mix in about 1/4 Cup Fresh Parsley.
- Serve topped over the grilled chicken.
