Make this easy breakfast that can be made gluten-free too with Pumpkin Baked Oatmeal!
Our family could live on Pumpkin Baked Oatmeal, it’s so delicious and perfect for a fall breakfast. Over the years I’ve made this in a variety of ways including using Steel Cut Oats and in the Ninja Foodi too, but today I’m going to focus on the tried and true oven-baked oatmeal.

How do you make this gluten-free?
In order to make this gluten-free, simply use gluten-free certified old-fashioned oats.
These are easy to find in many stores including Target and Walmart. As always check all ingredients to be sure there is no cross-contamination but this is the only primary switch needed.
Tips for Making Pumpkin Baked Oatmeal:
I highly suggest making this recipe in a 9×9 baking pan.
This recipe will work in a 9×13 baking pan; however, you will get the perfect thickness and even baking with a 9×9 pan. They just come out in perfect squares.
I will use the 9×9 baking pan and then cut out 9 squares to serve.
This recipe uses Old Fashioned Oats, if you use Quick Oats it will not turn out the same way. Quick Oats are smaller-cut oats, so you would basically need more quick oats to offset the ingredients used.
To avoid confusion, stick to using Old Fashioned Oats as written in the recipe.
What should you serve Pumpkin Baked Oatmeal with?
It’s best to garnish the oatmeal with Powdered Sugar, Cinnamon, or Chopped Walnuts.
I like to serve mine with some warm milk as well just to make it creamy, while my kids like it as is without milk. They like it to be more like a soft cookie.

Pumpkin Baked Oatmeal
Ingredients
- 3 Cups Old Fashioned Oats or Gluten-Free Old Fashioned Oats
- 1/4 Cup Brown Sugar
- 1/4 tsp Baking Powder
- 1 tsp Salt
- 1 tsp Cinnamon
- 1 Tbsp Pumpkin Pie Spice
- 1 tsp Nutmeg
- 2 Eggs
- 1 1/2 Cups Milk
- 1 Cup Pumpkin Puree
Optional to Garnish:
- Powdered Sugar
- Ground Cinnamon
- Chopped Walnuts
Instructions
- Preheat the oven to 350°F.
- Add oats, brown sugar, baking powder, salt, cinnamon, pumpkin pie spice, and nutmeg to a bowl.
- Whisk or beat in the eggs, milk, and pumpkin puree until the mixture is smooth.
- Spray a 9×9 baking pan with nonstick cooking spray or line with parchment paper.
- Evenly spread the oatmeal into the pan.
- Top with a dash of ground cinnamon on top.
- Bake in the oven at 350°F for 40 minutes or until browned on top.
- Let cool for 2-3 minutes, then cut out 9 squares to serve.
- This is best served topped with ground cinnamon, powdered sugar, and warm milk. It can also be topped with chopped walnuts.
