1/4CupBrown Sugar
1/4tspBaking Powder
1tspSalt
1tspCinnamon
1TbspPumpkin Pie Spice
1tspNutmeg
2Eggs
1 1/2CupsMilk
1CupPumpkin Puree
Optional to Garnish:
Powdered Sugar
Ground Cinnamon
Chopped Walnuts
Instructions
Preheat the oven to 350°F.
Add oats, brown sugar, baking powder, salt, cinnamon, pumpkin pie spice, and nutmeg to a bowl.
Whisk or beat in the eggs, milk, and pumpkin puree until the mixture is smooth.
Spray a 9x9 baking pan with nonstick cooking spray or line with parchment paper.
Evenly spread the oatmeal into the pan.
Top with a dash of ground cinnamon on top.
Bake in the oven at 350°F for 40 minutes or until browned on top.
Let cool for 2-3 minutes, then cut out 9 squares to serve.
This is best served topped with ground cinnamon, powdered sugar, and warm milk. It can also be topped with chopped walnuts.
Notes
The 9x9 baking pan works really well for this recipe and gives the right thickness to each piece.It can be made in a 9x13 baking dish it will just be thinner slices than what you see in the pictures.
