Did you know just like each of you, I have nights where I just don’t have time to cook? Yes, many nights!
Trying to balance a baby, preschooler, and working from home is tough. Some days are better than others, but this week was just rough! I felt like I had one thing after another to do and then on top of that a teething baby was wrecking havoc to our sleep and daytime routine. That meant that my son was falling in the cracks. I hate to admit that…makes me feel like a terrible mother, but he was! I felt like he was just so bored.
So, I took action. I made a schedule and now we have a list of things I plan to take him to do next week…of course that doesn’t solve the teething baby issue but hopefully we’ll manage.
In the midst of all of this, my family still had to eat! So, I went to Walmart and picked up some boneless chicken wings in the deli.
Back when my husband and I first got married, I used to buy these all the time for dinners. Now, I cook more from scratch; however, he still loves having them occasionally too. Not to mention on these hot summer days…a no cook meal is a nice break!
As I was shopping through the store, I remembered that I had a batch of Homemade BBQ Sauce at home, then I thought a little of that sauce topped over the Boneless BBQ Wings would be a match made in heaven.
What about all in a taco shell with some fresh veggies? Perfect!
Now, let us get back to those delicious wings. Sadly, I’m gluten free now so I usually opt for the grilled chicken, but I have eaten plenty of these to know exactly what they taste like. They are perfectly coated with sauce on the outside with just enough crispy to make them absolutely delicious. Not only that but I love that it’s all white meat!
My husband came home this past week after a 16 hour day in the heat…yes, I have no idea how he survives! He was beyond thrilled to see a batch of BBQ Chicken Tacos waiting on him. That first bite…and he said…wow…those are really good! Then, he ate them all! Apparently working that long makes you extremely hungry! Then, he let me know we needed to have those more often. Clearly…he’s missed them.
This dinner took me less than 10 minutes to put together! The shells can be warmed up in the oven, which I prefer or the microwave. I usually do the oven but on hot days in the summer…the microwave becomes my best friend. It’s just too hot for that oven to be on.
So, even though I have had a rough week and particulary the day I made these was really rough…this dinner hit the spot! Not only that it made my family happy and some days I need the extra help…so being able to purchase some pre-made chicken was a blessing. I think we all have those days….or weeks.
Or am I the only one with the screaming, teething baby?

BBQ Chicken Tacos
Ingredients
- 1/2-1 Lb Boneless BBQ Chicken Wings Cooked
- 1 Package Hard Taco Shells
- Lettuce
- Tomato
- Shredded Mexican Style Cheese
- BBQ Sauce
Instructions
- Cut up the BBQ Wings to fit nicely in the shells, typically in 1/4's.
- Next, warm up the shells per the package instructions.
- Then, build your taco with the chicken, lettuce, tomato, cheese, and drizzle bbq sauce on top.
- Makes 8-12

I pick up boneless wings often, but never thought of picking them up at Walmart, I usually walk past the deli section! I will have to look a little closer next time, these look delicious!
