One thing that I’ve been lacking in is protein in my breakfast. This could quickly be fixed with an egg for breakfast, but I’ll admit I’m a little picky about eggs. I like them a specific way and not necessarily plain. It honestly drives my husband crazy because he likes to cook eggs for us in the morning but I like mine a little bit more fancy than his liking. After 10 years of marriage though, he’s gotten pretty used to it. One way that I LOVE to eat them is with egg cups such as these Sweet Kale Egg Cups.
I typically will make these on a Sunday so that I can have them all throughout the week. This makes it much less work for my husband because he can just heat one up for me, and I’m a happy camper. Of course, he loves these too so we are usually fighting over the last one. I win though…the cook should win, right?
Now, these are so simple to make with the Eat Smart® Sweet Kale Vegetable Salad Kit. I simply added the contents of the kit to a bowl including the dressing too, along with about a cup of turkey crumbles and mixed it up. Now, you can skip the turkey crumbles if you want to keep this vegetarian too, it’s totally up to you. Once I had it all mixed up, it’s time to get the eggs ready. The first thing you want to do is spray a muffin tin with non-stick spray, then crack an egg in each muffin tin. This will be enough for 18 of these, so you will need a few muffin pans. The next thing you want to do is whisk up the egg a bit just to break up the yolk just a bit. Lastly, add a little bit of the salad mixture to each one then bake them in the oven.
Once they come out of the oven, breakfast is served plus you have a boost of superfoods too! What a wonderful mix, right?! This is one of my favorites. I like to add salt and pepper to the egg too, but that’s also optional.

Sweet Kale Egg Cups
Ingredients
- Eat Smart® Sweet Kale Gourmet Vegetable Salad Kits
- 1 Cup Turkey Crumbles Cooked
- 18 Eggs
Instructions
- Preheat the oven to 350*.
- Spray a muffin tin with non stick cooking spray, set aside.
- Empty the salad kit contents into a bowl including the cranberries and pumpkin seeds.
- Add in the turkey crumbles.
- Add in the dressing and stir well.
- Crack an egg into each muffin tin, then whisk slightly to break apart the yolk.
- Top evenly with a bit of the salad mixture.
- Bake for 20-25 minutes until the egg is nicely cooked.
- Carefully remove and serve.

I love the idea of having the cranberries in the egg cups! YUM! I make baked stuffed bell peppers with eggs, I bet I could put this mixture inside. Thank you for the tasty idea–I printed the coupon, too 🙂 Adding to my Walmart list for today!
I have the same problem. I don’t usually have protein during breakfast since I prefer to have a quick to prepare food. I have seen Eat Smart brand in our local supermarket. With your recipe, I might try this one.

I love sunny side up eggs and then I dip my buttered toast in the yolk. It is heaven to me. I would have never of thought to make something like this, but it does look pretty good.
I love this recipe and will be trying it. I am very bad about eating breakfast. Cooking them all at one time and then heating them up during the week will make breakfast time easier.
My daughter likes to make kale chips. I’m glad to find another use for kale, so that the bag doesn’t go to waste. This will be a great breakfast for both the family and me.
I’ve never tried anything like this with dried cranberries added. This sounds so delicious. I’m always looking for new breakfast ideas to try and this looks perfect to grab and go.
This is the perfect meal for me…I love making egg cups AND I love kale! I’ve never heard of sweet kale though. I’m going to have to look for it at my grocery store!
