Make a super quick and simple dinner but tasty with this Slow Cooker Lemon Pepper Chicken & Veggies. I’m sharing this post in partnership with Hamilton Beach, all thoughts and opinions are my own.
I’ve been so into quick and simple recipes lately such as slow-cooker recipes using my Hamilton Beach® Professional Sous Vide and 6 Qt. Slow Cooker. This little gadget has been my go-to for weeks now. It can quickly make vegetables and meats on the Sous Vide mode or cook all day long with the Slow Cooker mode. It’s a 2 in 1 way to get your dinner done! I’m excited to share this delicious recipe that I made using the slow cooker option.
I decided to make some delicious chicken wings but with a twist, placing asparagus on the bottom of the slow cooker, then I topped that with the wings and tomatoes. Once all of the food was in the slow cooker, I added butter, lemon pepper, and parsley on top. It gave off such a delicious aroma all day long, plus it was a nice, light dinner too.
I’m sure at this point, my husband is getting tired of all the vegetables we are eating lately, but with this overhaul of our diet, vegetables are getting back to the top of my list, regularly!
One thing I love about this product is that the lid is so clear and easy to see through, which makes it easy to check on dinner without removing the lid and causing heat to come out. Then, on the sous vide mode it’s vacuumed sealed to provide just the right amount of pressure to get it cooked evenly. Now, what really shocked me was how light it is, it’s much lighter than a traditional slow cooker. I lifted it out of the box expecting it to be heavy, but it was so light! Slow Cooker Lemon Pepper Chicken & Veggies
Ingredients
- 1 Lb Trimmed Asparagus
- 12 Chicken Wings
- 1 Cup Grape Tomatoes
- 4 Tbsp Butter
- 1 Tsp Lemon Pepper
- 1/2 Tsp Parsley
Instructions
- In the slow cooker, spray it with non-stick cooking spray.
- Place the asparagus on the bottom, top with the chicken wings.
- Place the tomatoes on top.
- Cut the butter and evenly place on top of the chicken and veggies.
- Evenly add the lemon pepper and parsley.
- Cover and cook on low for 8 hours.
- Carefully remove and serve.

Lemon pepper chicken wings were one of my favorite foods while I was growing up. I’ve been a vegetarian since I was 15 and have found vegetarian alternatives for most of the foods I miss, but lemon pepper chicken still eludes me after all these years. If I wasn’t a vegetarian, I’d make this in a hot minute!
I love this and that recipe looks awesome. I love me some chicken and asparagus and I’m definitely going to test out this recipe in my slow cooker. Oh and lemon pepper is one of my fav flavors. Thanks for sharing the recipes.
