A delicious meal perfect for any evening can be made with this Rosemary Vinaigrette Chicken. I’m sharing this recipe in partnership with Pompeian, all thoughts and opinions are my own.
Lately, my daughter is giving me all sorts of angst when it comes to dinner time or maybe I should say just meal time in general. She used to be such a great eater, I could put basically anything in front of her and she would eat it. Then, she turned into my son…and is now a very picky eater. I think she may actually be worse than he was in many ways. He has come a long way and has now broadened his horizons, but she just wants nothing to do with any meat from what I’ve found. Maybe she just doesn’t like meat? I haven’t really decided yet, but she has certainly been a hard one to crack when it comes to meal time.
Recently, she’s been on a chicken kick and actually is eating a ‘few’ bites of chicken. I decided I would use my Pompeian Red Wine Vinegar to make a tasty marinade for our chicken. It was the perfect combination of flavors and really complemented the chicken. I’ll just say it complemented it so much that both kids ate it, even my toddler with her picky taste.
Did you know that Pompeian’s Organic Red Wine Vinegar is made using organically grown grapes in Italy? Yes, you can bring the taste of Italy right to your table at home with Pompeian. I combined the Red Wine Vinegar with Robust Olive Oil and a few herbs to make the perfect marinade. This marinade can actually be used on chicken or even steak too.
It’s actually made with the mother, which is a dark, cloudy substance formed from pectin in grapes or apples. It contains healthy bacteria and antioxidants. If you consume at least 2 Tbsp a day of the Pompeian Organic Red Wine Vinegar, it’s actually proven to improve digestion, boost the immune system, combat cholesterol, prevent dandruff, sooth the throat, keep the skin healthy, and help reduce excess fat in cells. Can you believe that just that little bit does so much? It’s so full of healthy bacteria and antioxidants, it can truly help the body overall.
I mixed together the marinade and coated the chicken, we used a cut whole chicken. I decided to let it sit for a few hours in the fridge just to really get that flavor to soak in. Then, I pan-seared it and finished cooking it in the oven. It was so juicy and perfect paired with fresh produce. We even had some tasty sweet potatoes with it too.
Now, when I went to spray the pan to put the chicken in, I used the Pompeian Organic Extra Virgin Olive Oil Spray. This spray has quickly become my go-to for all things in the kitchen. I love using it when I’m making veggies too. It’s a full-bodied extra virgin olive oil that compliments this dish well.

Rosemary Vinaigrette Chicken
Ingredients
- 1 Whole Chicken Cut
- 1/2 Cup Pompeian Red Wine Vinegar
- 1/4 Cup Pompeian Olive Oil
- 1 Tbsp Rosemary
- 1 Clove Crushed Garlic
- 1 Tsp Salt
- Pompeian Organic Extra Virgin Olive Oil Spray
Instructions
- Combine the vinegar, oil, rosemary, garlic, and salt in a small bowl.
- Coat the chicken thoroughly with the marinade.
- Let the chicken sit to soak in the marinade for 1-2 hours.
- Preheat the oven to 400* when ready to cook.
- To begin cooking, spray a skillet with Organic Extra Virgin Olive Oil Spray, pan sear the chicken on both sides for about 5 minutes on medium-high heat.
- Once seared, place in a greased baking sheet and bake for 30 minutes, rotate, and bake for an additional 30 minutes or until well done. Remember the chicken should be 165* on the inside before being consumed.
- Serve.
