For the last week of our Re-Purposing Series I thought we would talk about Slow Cooker Pulled Pork. As we enter into the fall, this becomes a regular meal on our menu plan! We love pulled pork, even better is when the slow cooker does the work and you can use it for multiple meals either throughout the week or throughout the month by freezing the leftover pulled pork!
Let’s get right on to how to re-purpose pulled pork.
Day 1: Slow Cooker Pulled Pork– Start off by making a batch of Slow Cooker Pulled Pork. The amount you will have will depend on the size of the pulled pork that you purchase. This can be served plain or on a sandwich bun.
Day 2: Pulled Pork Spuds– On Day 2, top a spud with pulled pork and load it up with your favorite toppings! This is my favorite meal to get at a BBQ restaurant so I love being able to make it at home.
Day 3: Slaw Style Pulled Pork Subs– On Day 3 whip up a batch of coleslaw then using hoagie rolls top the pulled pork and slaw on the roll to make subs!
Day 4: Pulled Pork Salad– On Day 4 make a BBQ style salad with pulled pork, top it with your favorite dressing, I prefer ranch for BBQ salads!
Day 5: Chopped Pulled Pork – On Day 5 use a chef’s knife and chop the pulled pork and then eat it on a roll as a slider or eat it topped with BBQ sauce with some delicious BBQ sides without the bread!
