Make a full meal in an hour with this One-Pot Ninja Foodi Meatloaf and Potatoes, paired with corn.
I’ve already professed my love of the Ninja Foodi, so I guess I don’t need to do that again, but it truly is AMAZING.
Over the years, I have seen many making Instant Pot Meatloaf and Potatoes, so I knew I had to try this with the Ninja Foodi.
The great part of the Ninja Foodi is that you can actually broil the meatloaf right in the Ninja Foodi, the oven will not be needed at all!
What can you make in a Ninja Foodi?
The Ninja Foodi is basically ALL the appliances in one! That’s right, all of them. It has a variety of functions including these:
- Slow Cooker
- Pressure Cooker
- Air Fryer
- Broil
- Bake
- Saute

Why should you make Ninja Foodi Meatloaf and Potatoes?
This is an all in one recipe, that means you will be making the meatloaf and potatoes all in the same pot.
On top of the meatloaf and potatoes, you can also make corn with it! I made Meatloaf, Potatoes, and Corn all in the Ninja Foodi.
The potatoes will be mashed, which is perfect for this meal. Mashed Potatoes just go with meatloaf so well.
This meal can all be made in an hour with the Ninja Foodi. The sauce can be made on the stove in less than 5 minutes, while the meal is in the Ninja Foodi.
Do not let the instructions of the recipe overwhelm you, it’s actually very easy but since you are making a FULL meal, there are a lot more steps than a simple main dish recipe.
This is essentially steps for two side dishes and a main dish.
The meatloaf needs to be at least 160 degrees, which is easy to check with a quick test thermometer. I highly suggest investing in a good quality thermometer to use regularly.
What sauce should you use for the meatloaf?
The secret is in the sauce, the sauce is by far my favorite part of this meatloaf. I adapted my Slow Cooker Meatloaf, which can actually be made in the foodi with the slow cooker function too.
We use a tangy sauce to coat the meatloaf with, this sauce gives it a wonderful sweet and savory taste that my family loves.
If you are pressed for time you can use a simple marinara sauce; however, I highly suggest taking the few minutes and making this sauce.
It can also be made in advance and used for a variety of meals throughout the week.
We use it for sloppy joes, meatloaf, meatballs, and more!
Now it’s time to enjoy this delicious Ninja Foodi Meatloaf and Potatoes, trust me you will love this dinner!
Ninja Foodi Meatloaf and Potatoes
Ingredients
Meatloaf
- 2 Pounds Ground Beef
- 2 Eggs Beaten
- 2 Cups Old Fashioned Oats or Gluten-Free Old Fashioned Oats
- 1/2 Cup Evaporated Milk
- 1/2 Cup Chopped Onion
- 1/2 Tsp Garlic Salt
Potatoes
- 3 Pounds Peeled Potatoes Russet or Yellow
- 1 Cup Water
- 1 Cup Cream 1/2 and 1/2
- 1/4 Cup Sour Cream
- 4 Tbsp Unsalted Butter
- 1 Tsp Garlic Salt or to Taste
Corn
- 12 oz Frozen Corn
- 1 Tbsp Unsalted Butter
Sauce
- 1 Cup Ketchup
- 3/4 Cup Brown Sugar Packed
- 1/4 Cup Chopped Onion
- 1/2 Tsp Liquid Smoke
- 1/4 Tsp Garlic Powder
Instructions
- In a large bowl, combine all ingredients for the meatloaf.
- Spray a sheet of foil with non-stick cooking spray, shape the meatloaf and place on the foil.
- Set aside and wash hands, then cut the potatoes into quarters.
- Place the potatoes in the bottom of the Ninja Foodi with 1 Cup of water.
- Place the rack inside the foodi where it extends up to the top of the pot.
- Place the meatloaf on the rack.
- Set to pressure cook on high for 25 minutes.
- While this is cooking, prepare the sauce by combining all ingredients in a small saucepan on medium heat.
- Whisk it until the sugar has dissolved and set aside.
- Quick-release the pressure.
- Carefully remove the rack with the meatloaf on it and set aside.
- Carefully remove the pot and pour the potatoes into a large bowl.
- Add the rack back into the foodi; however, this time place the rack where it's low in the pot.
- This can be done by simply changing the handles on the side, flip them the other way.
- Pour the corn onto a sheet of foil with the sides up.
- Add the butter on top of the corn.
- Place the meatloaf and corn on the rack in the foodi. (Note - this fits if you do 2 pounds or less of ground beef. I have found if I do any more than this it will not fit as well next to it. If that happens, I go ahead and microwave the corn or put the corn in at the end when I take the meatloaf out.)
- Coat the meatloaf with the sauce.
- Place the foodi on broil for 5 minutes at 450 degrees.
- Open and stir up the corn.
- Broil an additional 5 minutes.
- While this is broiling, mash the potatoes with a hand masher and stir in the remaining ingredients.
- Add additional salt to taste if needed.
- Remove the meatloaf and corn.
- Serve!

Should the meatloaf be completely wrapped or open at the top? I see 2 pictures done both ways?
Good question! I leave it closed during the initial cooking and then open it up for broiling.

My ninja foodie possible cooker pro does not come with a rack so how would I make the meatloaf and potato meal with corn
This recipe uses the Ninja Foodi 14-in-1 Multi-Cooker, you would need one that has the pressure cooker function and wire rack to do it all in one as this is instructed. I did parsley on top, sometimes I’ll do rosemary too, just to give it some extra color…but usually my go-to is parsley. 🙂 I hope you enjoy it!
Thank you I did meatloaf in my 8qt foodi. Pressure for 35 quick release. I had gr pork, gr beef, and meatloaf mixture from my stores meat dept. Maybe 1.5lb or so. 1 egg a little milk seasoning (s+p etc) and a slice of sourdough bread crumbled small. I had not ever done in foil but had faith and it was perfect! Topped with my referred tomato paste and air fry mm just short of 15 mins let rest oh My Again thank you

I haven’t made this one before with anything other than foil. So I’m not too sure on alternatives to it other than maybe not using foil the main thing would be the dripping from the meat into the potatoes underneath.
You could wrap it in parchment paper and place it on an aluminum foil sheet atop of the rack 🙂
What about the ninja loaf pan?
I haven’t tried this one yet in the loaf pan, but it’s worth a try, the times may need to be adjusted with the loaf pan though.
Could you use anything other than Oats? Like almond flour or something like that?
I’ve only done this with oats, but others have done it with crackers. I’m not sure about almond flour, we haven’t tried that in place of oats before.
Flaxseed flour meal works as well but it will give it a little different texture. And use 1-3/4 cup rather than the 2 cups it calls for with oatmeal. If using just plain flaxseed rather than the flax meal then use 1-1/4 seeds and add an extra 1/4c of milk or just add 1/4c water as they seeds require and pull out more moisture.
I replaced oats with 3 slices of bread soaked in milk. I replaced the cream with the milk that I soaked the bread with.
I also sauted bell peppers and onions then added that to the meatloaf.
The sauce. I did not use the smoke and i added bell pepper and onion.
I am actually making this tonight for dinner. Because when I tried this meatloaf. It was so delicious. The sauce was amazing.
I now cook this at least 2-4 times per month. I personally did not like the potatoes being cooked with the meatloaf. It gave the potatoes a funny taste, but thats just me.
Try using half and half in place of the water along with 1/2 stick of real butter . This brings out soooooo much more flavorful potatoes. That’s how I cook mine.
I use bread crumbs and an egg to hold mine together. Italian bread crumbs gives the meatloaf a great flavor.
It’s great with those too, I love the different flavors.
My potato’s burned a little other then that it was excellent – can you suggest what I did wrong ? I put 1/2 cup water
What type of potatoes did you use? I’ve found that yellow gold have more water base in them, which I think helps avoid burning. Another thing would be to add an additional 1/2 cup water. I haven’t had any potatoes burn yet, but I know a lot of these machines tend to heat differently even when they are supposed to be exactly the same.
I have found with ANY foodi recipe I have to reduce heat in mine by five to ten minutes. Cooks hot. With this recipe the loaf was way too much to get in the Foodi with corn. I barely got the 2 lbs of loaf in wrapped in foil. I measured exact. We have our own lean meat so there was very little water or fat dripping to worry spoiling potatoes. Everything turned out super. Just did not have corn.
When I made this today, I tested out different levels of water…I decided to do 1 cup this time and that worked fine without burning. I adjusted the water amount too in the recipe. I hadn’t heard anyone else mention this issue but that should help avoid that for the future for everyone making it. Thanks!
I had a difficult time placing the meatloaf and the corn on the rack at the same time. No matter what I did I couldn’t get them to fit in there side by side and I have the 8qt sized Ninja. Any tips on making them fit? The meatloaf itself took up the entire rack and I had to cook the corn separately. (Still delicious!)
It’s really going to depend on the size and shape of the meatloaf, keeping that in mind when shaping it so that it both fits. I found that if I go even a little bit over 2 pounds of ground beef then I can’t fit it. It has to be about 2 pounds or less and narrow shape.

Hi would it be ok to use a silicone loaf pan for the meat loaf and cover with greaseproof paper until time time to add sauce
You can use silicone pans in the Foodi, I am not sure on the paper.
Can you post a picture of the corn and meatloaf on the wire rack for broiling?
Hi! I will try to take one next time I make it. When I make it though in the picture you see with the meatloaf on that rack, I just foil wrap some corn and put it right next to that. I have made it before where I used more than 2 pounds of meat and had to go ahead and microwave the corn b/c there wasn’t much room left. If you stick to 2 pounds of meat or less, you should be able to add it right next to it in some foil.
Did you use 6.5qt size or 8qt size Ninja to make this? (I am deciding which Ninja size to buy)
I used a 6.5 quart when I made this and now use an 8 quart, really either one works just as well in my opinion. The 8 quart is a little bit bigger, but I didn’t feel like it was that much difference in the two when it comes down to it.

So I just made my Meatloaf, Sorry I didn’t use your recipe, But mine uses Barbecue sauce and Chopped Corn in it to keep it moist, So it has always been our Family Favorite since we don’t care for the Tomatoey and Ketchup flavors of traditional meatloaf. Okay sorry for that Rabbit hole. LOL anyways I had Red above where folks were discouraged with the tinfoil and not sure this is much different, But they are designed with baking food in mind, So I feel safe using them.. I was able to get 2 of these (meatloaf Pans) in my Smaller Ninja Foodi and still covered them with Foil to hopefully keep the water out.. I Wish I could put pictures on here so I am sorry for that.. But I put one small disposable 8× 3 7/8 loaf pans in the foodi and one cup of water beside it, Then the potatoes, and then I set the other Meatloaf pan on top of the first pan, but crossed in an X formation and NO racks.. I will tell you all if it doesn’t turn out. But I am following the rest of this recipe for times and such..

I’m dairy free… can I just omit the evaporated milk?
I haven’t made it without that before but I’d imagine you probably could.
I’ve found dairy-free evaporated milk in the baking aisle in my store if that helps you at all. 🙂
I have 1 lb of beef, pork and veal mixed. Would the cook time remain the same?
Yes, it should be the same just check the internal temperature before serving to be sure it’s at least 165 degrees.
I did as you said above and used 1 cup of water with my potatoes but before my foodi could go into pressure mode it warned me to add water but my potatoes had already burned 🙁 I cleaned the foodi out and added the meatloaf back alone and will just make more potatoes on the side. Sad that my potatoes burned i was really excited to try this all in one meal 🙁
Sorry to hear that! We make this about every other week or so without any issue, so I’m not sure why it would give you the warning for water, even with 1 cup I’ve never had that issue. Sometimes I wonder if the machines themselves heat differently.
I made this tonight. Not sure if i did it wrong at first. After pressure cooked for 25 min the dropped it down and did broil like it said but it didnt cook all the way. Outside looked good but raw inside. So i flipped it and tried cooking for 5 min on broil no additional sauce then added more sauce on top last 5 min. Hopefully this does the trick.
The only thing I can think of with this is I wonder if the machine didn’t come to full pressure? When you released the steam, was there a lot of steam coming out?

I made this and it was so easy!
I wanted to go as easy as possible so I tried a different meatloaf recipe (beef, breadcrumbs, eggs, onion).
Russet potatoes, chopped with skin on (washed it of course). I wish I stirred the water around the potatoes because some got stuck to the bottom of the pot. Not a big deal, but harder to clean.
I used 2lbs of beef and definitely couldn’t fit the corn on the rack. I just roasted it while the meatloaf cooled down a little. No big deal!!
Anywho, this recipe was amazing and so easy! I didn’t have all the ingredients but even with some substitutions it came out so delicious and easy.

Have you ever made this with 3 lbs of meat?
I have 3 lbs of ground turkey in the fridge and my kids want meatloaf and I want to make in the foodi, with the potatoes
but don’t want to get everything ready to find out it won’t fit!

It would likely work, but you may not be able to fit the corn in, so you’d have to do that seperately.
I made this tonight and it was FABULOUS! I had 2 1/2 lbs of meat (pork and ground beef) was afraid it would be dry or that it would not cook thoroughly. It did cook thoroughly and it was so very moist. My husband hates dry meatloaf and he raved and wanted the leftovers for his lunch tomorrow. Clean up was so easy with the meatloaf in the foil. You are a life saver Kristy. I wish I had taken a picture of the meal before it was devoured by the family.

To heat up later? Yes, just use freezer safe storage.
How do you cook this recipe with only a pound of hamburger meat and possibly 1.5 lbs of potatoes?
I haven’t done this one with the 1 pound of meat, you would want to do 1/2 the amount of sauce, as far as cooking time goes I’d probably cut about 10 minutes off cooking time, but again you’d want to check it all with a meat thermometer to be sure it’s fully cooked.
I tucked frozen mini corn cobs right in with the potatoes. Worked like a charm!

My family likes baked sweet potatoes with meatloaf (whole). I usually air fry them in my Foodi. How would I adjust the recipe for whole sweet potatoes?

Whats broiling as its not a British term.
In the UK models, I believe it’s the ‘grill’ function, it’s basically just getting the top hot and toasted.
How much would I need to adjust the time if I cut the recipe in half? It’s just my husband and I, so we don’t need a 2 lb meatloaf or 3 lbs of potatoes. I would do a 1 lb meatloaf and about half the amount of potatoes.
I would probably do half the time and then check on it, you may have to add time to it.
I plan on making this. In my traditional cooking meatloaf in the oven, I always end up with about 1-1/2 cup juice around meatloaf, to be discarded. I noticed you did not mention any juice (fat/water) around meatloaf. Is there any cooked out liquid when using the Foodi? Thanks!
There wasn’t much when using super lean ground beef.

If you make this in the XL, you will need more liquid. Otherwise, it is a great recipe.
