If you haven’t had Gluten Free Chicken Caesar Pasta Salad, then it’s time to try it for dinner tonight!
I love pasta salad, who doesn’t? When I went gluten free though, I missed it so much. I felt like I really couldn’t find any rotini pasta for pasta salad. Plus, back when I went gluten free, you really could not find gluten free pasta at all like you can these days. It’s time though for Gluten Free Chicken Caesar Pasta Salad!
This past week though, I actually found gluten free rotini pasta, of all places to, I found it at Aldi.
I believe though there are a variety of pasta brands that now carry it in stores like Walmart too, so it’s available. It also made for a delicious Gluten Free Chicken Caesar Pasta Salad.
I made this last year for my husband and kids, but I couldn’t enjoy it! I happened to see it as I was making a menu plan, and then realized I needed to make that again with some gluten free pasta.
If you aren’t a huge fan of Caesar Dressing, you can always use Zesty Italian Dressing too. I like to use Caesar Vinaigrette. I do not like the Creamy Caesar Dressing, the vinaigrette works the best.
What do you need for Gluten Free Chicken Caesar Pasta Salad?
- Gluten Free Rotini Pasta (or your pasta of choice)
- Caesar Vinaigrette Dressing
- Cooked Chicken
- Spinach Leaves
- Tomatoes
- Shaved Parmesan
This is a great meal served either hot or cold. I love it for a lunch actually, especially during the summer months. It honestly brings me back to my early 20s.
I used to make back then it was just boxed pasta salad, remember…there was a time when I really couldn’t cook! My friend and I would sit at the table and talk or watch some TV and just hang out. That was before kids, before smart phones, maybe even before Facebook…GASP!
That was when REAL conversations took place in our living rooms instead of looking at phones while pretending to hold a conversation. Don’t worry…I’m guilty of it too.
Do you have certain meals you serve that bring you back to a specific time in your life? I find it so strange that for whatever reason pasta salad does that to me. Ha! Maybe I’m crazy, but it just reminds me of a different stage of life.
I’m looking forward to having this during the summer too with my garden fresh veggies. I have a wide variety of pasta salads I plant to create with it.
Anyone else ready for gardening? It’s almost here! We are normally planting our flowers and plants by now, but it’s still pretty chilly and so rainy that we haven’t even been able to start yet. I’m hoping in the next couple weeks, we will have it planted.
I’ll be posting some updates more this year on gardening as well! I’m hoping to do a lot more on that than I have in the past.
Now let’s enjoy some delicious Gluten Free Chicken Caesar Pasta Salad!
