Our summer is starting to wind down, is yours? We are just a few weeks from school starting and I’ll admit, I’m happy. I’m looking forward to our routine again, plus getting lots of work done during the daytime while the kids are at school. I always feel like at the end of the year I can’t wait to get out, then around July it is time for the kids to get back to a routine. In the meantime though, we still need dinner and lately I’ve been in a hurry trying to get it done. This Easy Chicken Fried Rice has become a go-to for us and a regular contender on our menu each week.
This dish can EASILY be made in less than 10 minutes using the Minute Ready to Serve Family Bowls. They are fully cooked and ready to go. Now, you can heat them up in the microwave but since this is going to be made in a skillet, all that you need to do is pour it into the skillet and it will heat through there. The 16oz family bowl provides enough rice to make this a 4 serving meal, which happens to be perfect for our family. It is also gluten-free plus contains no preservatives. I used the Whole Grain Brown Rice for this meal.
I like to use chicken from earlier in the week to make this quickly. I simply save a bit of chicken about a cup to keep to make this and then I can reuse it. That also cuts down on the cook time because the chicken is already cooked and ready to go.
Since I eat gluten-free and it’s basically impossible to find Chicken Fried Rice without gluten, I love making it myself. I’ll go out on a limb and tell you that I enjoy this more than I do take out anyway, so I’m not complaining! I typically add this to our menu once every few weeks and then I have extra for lunches throughout the week too. It’s tasty paired with egg rolls too if you want to make some to go with it to complete the meal.
My husband and I even make this for date nights, it’s a fun way to have a meal in without spending too much time in the kitchen. It makes for the perfect meal to eat before a movie night.

Chicken Fried Rice
Ingredients
- 1/2 Cup Finely Diced Chicken
- 2 Tbsp Vegetable Oil
- 1 Cup Dried White Rice Cooked and Cold
- 1/4 Cup White Onion Diced
- 1 Celery Stalk Diced
- 2 Carrots Diced
- 1 Egg Beaten
- 2-4 Tbsp Lite Soy Sauce or Gluten Free Soy Sauce
Instructions
- Begin by frying the chicken in the oil. Add in the veggies and let this simmer for 10 minutes or until the onions are slightly browned.
- Next add in the rice and 2 Tbsp soy sauce. Continue cooking for another 10 minutes then add in the beaten egg. Stir the egg in and continue cooking for an additional 5 minutes.
- At this point if you want it darker in color add in the remaining soy sauce.
- This dish makes about 4-5 servings.
