This is my favorite way to make okra. It is not truly fried, so it may not be liked by all, but it is LOVED by me! I am not really into fried foods, so this is a fabulous alternative to me. It also helps that I grew up on okra made this way.

Cornbread Okra
Ingredients
- 1 lb of Okra
- 1 Box of Jiffy Corn Muffin Mix
- 1 Tbsp Olive Oil
- 1/4 Cup of Water
Instructions
- In a large Ziploc bag, pour all ingredients in. Seal the bag and shake it up to coat the okra.
- Spray a skillet with non-stick cooking spray, then pour the mixture in and start cooking on low. This usually takes me about 45 minutes to cook, and I constantly am flipping over the okra so that it does not burn too quickly. I usually cook until the breading is a bit brown.

In the end it will not be fried and the breading doesn’t stick perfectly to every piece of okra, but it adds a nice texture and flavor to the okra.
I love okra fixed this way, and I hope you do too. Enjoy!

I LOVE LOVE LOOOOOOOOOVE fried okra! I am going to have to give this a try, I am sure my waist line will thank me for it. lol
I LOVE fried okra too, it’s one fried food I could probably eat all the time. This is a good alternative for it, but every now and then I still give in to the real thing! 🙂
The quality of the coffee will more than make up for
that extra money spent. Then you pull out from the driveway and wonder your entire day should you
made the right decision or not. Look for the clean, sleek design and good performance.
I came across this recipe and modified slightly. I mixed the Jiffy mix as directed and added the okra and one whole onion coarsely chopped. I then cooked it in a muffin pan in the oven at 375 for 30 minutes. Really good that way. Sometimes I add some small fish chunks or some Tabasco sauce.
That sounds like a great way to mix it up! So glad you liked it.
