Enjoy a delicious bowl of Chicken & Corn Chili!

As we head into the fall, my husband and I seem to end up hosting more parties. We actually enjoy having family and friends over especially during the fall. In the past, we would cook all sorts of side dishes along with smoked meats and have friends and family over to enjoy some time together.
It’s been far too long since we had a fall get together, likely because last year we were too busy trying to get our home ready to sell. This year though, we are settled and enjoying our country living.
Since we have young kids, we like to have friends over for dinner and games at our home since it is just an all around happier situation when the kids can run and play or go to bed on time. I decided for our next dinner party that we need to do a Chili Night using the new McCormick Gluten-Free Seasonings.
One of the best things about these seasonings is that they do not have artificial flavors and colorings. They also have no MSG or gluten, plus they are the same price point as the gluten-filled products. That’s a win! Basically, they make dinner time easy!
We actually had a similar chili night for my daughter’s birthday party last year, it was such a hit, I was anxious to try it again.
This time I made the Chicken & Corn Chili from McCormick. I was shocked to find this chili literally takes less than 30 minutes to make.
I actually made it even quicker than that because I used rotisserie chicken.
Along with the chili, I decided to remake my favorite cornbread but add a packet of the Gluten-Free Taco Seasoning to it. This gave it a little bit of spice and kick to it that complimented the chili very well.

Of course, along with the chili and cornbread, it’s always nice to have an appetizer for your guests. I roasted potatoes from the farmers market then topped them with the brown gravy.
The potatoes are perfect for my picky eaters as they both love them, then the gravy added makes them even more anxious to eat them.

I have to admit out of all the new gluten-free seasonings from McCormick, the gravy is by far my favorite. I saw it at the store and honestly did a happy dance in the aisle. At Thanksgiving, my mom typically will use a packet of McCormick gravy to make the gravy, but I can never eat it because of my gluten intolerance. This Thanksgiving that all changes because they also have a Gluten-Free Turkey Gravy!

Gluten-Free Chicken & Corn Chili
Ingredients
- 1 Cup Rotisserie Chicken Shredded (More if Preferred)
- 1 Package McCormick® Gluten-Free Chili Seasoning Mix
- 1 14.5 oz Can of Diced Tomatoes Undrained
- 1 16 oz Can of Pinto Beans Undrained
- 1 11 oz Can of Corn Undrained
- Toppings - Shredded Cheese Green Onions, Sour Cream
Instructions
- Spray a skillet with non-stick cooking spray and warm up the chicken, then add in the seasoning in accordance with the package instructions.
- Next stir in the tomatoes, beans, and corn. Cover and simmer for 10 minutes or until brought to a bubbling boil.
- Serve with desired toppings.
