Do you need to mix up your dinner routine? It’s time to do it with a Taco Style Quinoa Stuffed Avocado!

We made it through our first week of school without any major hiccups, that’s a victory! We also added a few new meals to our menu this week too such as these Taco Style Stuffed Avocados.
I have been attempting to add some meatless meals into our weekly routine with plant based proteins instead. I’ll admit that it is a bit difficult when your husband believes meat is supposed to be part of every meal.
Slowly though, I’m bringing him over to the plant based protein side of life.
What are plant based proteins?
It’s basically a high-protein alternative to meat, it’s a vegan protein option.
My personal favorite plant based protein is Quinoa. Quinoa is actually the seed of a plant and it is a complete protein. That means that it all 9 of the essential amino acides. It’s a wonderful protein to add to a meal and it’s extremely versatile.
I decided to mix cooked quinoa with taco seasoning for the protein portion of this Taco Style Quinoa Stuffed Avocado. Once I had the quinoa prepared, it was essentially just a matter of building your stuffed avocado.
What makes these Avocados even better?
The perfect way to serve avocados is by spraying them with a nice coating of Pompeian Avocado Oil Spray.
This spray has a mild nutty flavor that really enhances foods. It’s perfect with a high-heat cooking method such as the grill. I decided to slice each avocado and spray it with Pompeian Avocado Oil Spray to bring out more of the flavor.
Once it was nicely coated, I grilled them for about 5 minutes. Once they are nice and grilled then it’s time to stuff the avocados.

- Pompeian Avocado Oil Spray
- Avocados
- Quinoa
- Taco Seasoning
- Bell Peppers
- Lettuce
- Tomatoes
- Cheese
- Sour Cream
- Catalina Dressing
- Cilantro
Essentially, this is a taco without the taco shell, it’s a great gluten free option too. If you would like to make it vegan, simply omit the cheese and sour cream or use a vegan alternative.
These are absolutely beautiful to make, plus they are even more delicious to eat.
This is a great option for an alternative to celebrate Taco Tuesday too.

Taco Style Quinoa Stuffed Avocado
Taco Style Quinoa Stuffed Avocado
Ingredients
- Pompeian Avocado Oil Spray
- 4 Avocados
- 2 Cups Quinoa Cooked
- 1 Package Taco Seasoning
- Toppings Lettuce, Tomato, Bell Pepper, Cilantro, Shredded Cheese, Sour Cream, Catalina Dressing
Instructions
- Slice the avocados in half and remove the seed.
- Spray each half with Pompeian Avocado Oil Spray.
- Place cut side down onto a grill warmed to medium-high heat.
- Grill for 5 minutes or until toasted.
- While this is grilled, mix the cooked and warm quinoa with the taco seasoning.
- Once the avocado is done, stuff each avocado with quinoa and toppings of your choice.
- Serve.
