A few weeks back I received a copy of Catherine McCord’s new cookbook, Weelicious Lunches: Think Outside the Lunch Box with More Than 160 Happier Meals. This cookbook is amazing! I can tell you honestly that this may be my favorite cookbook that I have ever received! Why? It’s full of lunch ideas for my kids! TONS!
Most of them I looked at and had that “Why didn’t I think of that?” thought…but I didn’t! I was blown away with the amount of great ideas for foods that I could try with my picky eater. I actually nearly bookmarked the entire cookbook of recipes to try for his lunches this year. Remember I have to pack a WEEK of lunches? I’m sure most of you do too and I just knew I would run out of ideas, but I’m pretty sure this book has enough to last me years!
One that we immediately tried were Strawberry-Cream Cheese Sushi Rolls! Basically all this involves is a little strawberry preserves with whipped cream cheese on bread then rolled up! Simple as pie, friends…simple!
A few others that I want to try are her rice cakes and nuggets. I also want to try the veggie roll-ups too. Many of them look just as good for my me as they would be for my son.
My picky eater loved these so much that he keeps asking for them in his lunch! That’s a win for us, because he is so extremely particular about his food. I’m anxious to get started on the list of recipes I bookmarked to make for his lunch this year and likely for his dinner too!

Strawberry-Cream Cheese ‘Sushi Rolls’
Ingredients
- 4 Slices Wheat Sandwich Bread
- 8 Tsp Whipped Cream Cheese
- 8 Tsp Strawberry Preserves
Instructions
- 1. Using a rolling pin, roll the bread to 1/4 inch thick.
- 2. Spread 2 Tsp of cream cheese on each slice.
- 3. Spread 2 Tsp strawberry preserves o top of the cream cheese.
- 4. Roll up the bread and cut each roll into five 1 inch sushi pieces.
