This new year is all about truly living for me. My husband and I decided ‘live’ is our word this year that we are going to focus on. One part of that for me is to get my health back in order. I started this several months ago by adding back exercise into my routine, now I’m working on my diet. One new meal that we introduced to our line up is this Quinoa Taco Salad.
By adding in Village Harvest Quinoa, I am able to add a very nutritious food to my diet that is full of antioxidants, fiber, and vitamins. Of course it’s also absolutely delicious too! Today, I’m sharing this delicious Quinoa Taco Salad.
I decided to go with Village Harvest Rice & Grains because their product is naturally gluten-free which gives me a great option being gluten-free myself. Plus it is packed full of amino acids and protein. It also contains almost twice as much fiber as other grains.
This taco salad is packed full of my favorites including fresh red lettuce, tomato, avocado, red onions, black beans, and cheese. Then, I topped it with the Golden Quinoa and Catalina dressing.
At first, I honestly thought…I need meat! I was trying to make this a meatless meal and was craving that delicious meat that is normally in my salad. With the first bite though I was in heaven and it tasted amazing. The quinoa gives it a nice texture that helped quench that meat craving. I suppose you could always add meat to this too; however, I was looking to make this a meatless meal.
My husband devoured his salad as well and thought it tasted amazing. The thing I love about quinoa is that you can truly add it to just about anything. I’m planning to add it to some Zoodles next week when I try out another recipe.
For us, I feel like a major way to play out our word this year of ‘live’ is to also change our diet and get in better shape not only for our kids but for our own selves. We only have one body, right? I want to be sure I’m feeding my body the nutrients it needs on a daily basis.

Quinoa Taco Salad
Ingredients
- 1 Head Red Leaf Lettuce
- 2-3 Cups Village Harvest Golden Quinoa Cooked (1 Cup Uncooked makes about 2-3 Cups Cooked)
- 1 Cup Black Beans
- 1 Avocado Sliced
- 1 Cup Corn
- 1/2 Cup Red Onion Sliced
- 1 Tomato Sliced
- 1/4 Cup Shredded Cheese
- Catalina Dressing
Instructions
- Prepare your Quinoa if you have not already, typically 1 cup uncooked will make about 2-3 cups when cooked.
- Build your salad with the ingredients listed above starting with lettuce and topping with the dressing.
- Serve.
