Do you know what makes a great treat after dinner? Pudding Cups! Of course, not just any pudding cups but these delicious Pudding & Brownie Parfaits!
A few weeks ago, I hit my breaking point with my picky eater AKA my son. He will be turning 6 this summer and even though I make dinners, which happen to be pretty good, every single day, he refuses to eat almost everything I make. Why? Regardless of what it is, he tells me it will taste like ‘yucky carrots’. This child of mine has gone so long without eating so many good foods all because he’s too scared to try them. He also hates veggies, but he has hardly tried any so really he does not know what he likes and doesn’t like yet.
Now, I have tried everything I could think of to get him to try different dinners but he will gag himself to the point he’s throwing up, pleasant? Not so much. Last week though, I had it! I was so tired of making dinner every single day just to be serving him something totally different, which was usually a basic and not so great dinner that I knew he’d eat. I laid down the law to him and let him know that I would be enforcing new dinner rules, along with adding eating dinner to his chart of rules (chores) each week.
The shocker?
It worked.
If I didn’t see it with my own eyes, I would have never believed it. Ever since that day, he has eaten every single meal that I make for dinner and he even says “mommy this is so good, can I have more?” Now… all these years he would not try it and suddenly he has boundaries and rules and he is all in.
A celebration was needed, which brings me to these delicious Pudding & Brownie Cups. I knew that I had to make something to celebrate not only because it’s coming up on Valentine’s Day but also because I was SO proud of him. This was HUGE for us. It actually gives me so much more motivation to cook each day when my kids are actually eating what I’m making.
I decided to whip up these parfaits as a treat. They are so simple to make, I used the Chocolate and Vanilla Snack Packs, then I topped it with brownies, whipped cream, and chocolate covered candies and sprinkles. Sounds wonderful, right? It is!
So, I was most impressed by the new Easy Open Lids! In the past, I basically would have to use a knife to start to peal the lid off, now you simply pull it right off with no additional help necessary.
The brownies can be either homemade or store bought, it’s totally up to you, simply tear them into bite size pieces and place them on top, then once you have your parfait complete you can easily mix it into the pudding. It’s the perfect, simple dessert or in our case a HALLELUJAH treat!

Ingredients
- 4 Pack of Vanilla Snack Packs
- 4 Pack of Chocolate Snack Packs
- Brownies Baked
- Whipped Cream
- Pink Chocolate Covered Candies
- Valentine Sprinkles
Instructions
- Open the Snack Packs, then place the crushed or torn brownies on top in small pieces.
- Top it with whipped cream, candies, and sprinkles.

Yey!!!! So happy for you to have figured out a way to nix your little picky eater! It was a battle we fought (and still do occasionally) with our daughter and it can be so draining! A Snack Pack hallelujah was definitely called for! These are so cute and easy too and I bet they were delicious! #client
