Are you in back to school mode yet? I am! I think I have just about everything we need though to get back to school. I need to get a few more little things but outside of that I’m ready…or should I say we? I’m definitely ready to get back to a routine. This summer actually worked out pretty well with working with my kids at home, but about 2 months in, we were all ready to get back to a consistent routine.
My daughter is so anxious to go back to preschool too, so just a few more weeks and we kick back into our regular routine, which helps me out because I suddenly have my evenings back that right now are filled with work. In the midst of back to school season, it means that I’m back to making lunches every single day again. My son eats gluten-free for the most part which means he can’t eat lunch at school. It’s sad too because they actually have some amazing lunches served at his school, it’s not your normal school lunch. It’s okay though because with all these ideas he’ll be set for a while with his lunches.
I decided to try out these Protein Packed Rice Cakes because my kids get very tired of sandwiches and guess what? They both LOVED them. My son who doesn’t like raisins couldn’t get enough of these. These are pretty simply and easy to get creative with too. I simply added peanut butter to a rice cake, then topped it with raisins and oats. We like to mix them up with all sorts of dried fruits, even bananas on top of them are delicious.
I love eating these because they are a great gluten-free snack and it’s a good alternative to sandwiches because let’s face it…they do get old after a while.

Great lunch idea! my kids go back to school tomorrow and I don’t have any ideas on what I can send them to school with. I don’t know if they will eat this but it’s worth a try.
These look sooo good. My kids are not fans of rice cakes but I may be able to make it work with these tips. I’ll definitely give it a try in their lunch boxes this school year.
I never thought of sending rice cakes as part of a school lunch. My kids get tired of sandwiches too. I’m not looking forward to school starting again because it means I go back to work too.
As someone who telecommutes and works from home, I love to have healthy snacks around the house. It is tempting to have candy nearby so this gives me an easy to make option. I happen to like some brands of rice cakes, and this inspires me to mix them up!
