Sometimes we all need just a simple recipe or way to make dinner a little bit different, this Slow Cooker Lemon Ranch Chicken will do just that.
We are just a few weeks away from going back to school and that means our summer is coming to a close. The pool we go to has already changed their hours to gear up for back to school and in just about 4 weeks it will be closed for the season. I’m a little bit sad about that, maybe a lot sad because that also means we will soon be craving lake time but not able to go. Luckily, the fall is pretty mild around here so hopefully that means a little more time at the lake.
In the midst of summer ending, we are still incredibly busy, maybe more so as we head back to school. That means I need a quick and simple dinner and this time a little ranch packet and chicken can go a long way. I decided to make a simple ranch chicken in the slow cooker but instead of stopping there I added sliced lemon to it. This gave it a bit of a sweet twist to the zesty ranch seasoning. I decided to top ours over a little bit of rice and pair it with some fresh veggies. I thought this was delicious and the chicken was very juicy, not dry at all.
The best part? It only took a few minutes to put together and then we could get out the door to stock up on school clothes and supplies, plus enjoy a few hours by the pool for the end of the season.
Are you in need of some quick meals? I’m starting to realize that as my kids get older, I’m always in need of quick meal ideas. Those seem to be the only recipes that actually get made around here in the afternoons and evenings. It’s even better when I can put it together the night before and have it ready to go in the morning.

Slow Cooker Lemon Ranch Chicken
Ingredients
- 4 Medium Sized Boneless & Skinless Chicken Breast
- 1 Lemon Sliced
- 1 Package Ranch Dressing Dry Seasoning
- 2 Cups Cooked White Rice
Instructions
- Place the chicken breast in a greased 6 quart slow cooker.
- Top it with the lemon.
- Evenly pour the dry seasoning over it.
- Cover and cook on low for 8 hours.
- Serve topped over cooked rice.

I have been wanting one of those Instant Pots, too…they sound so interesting. This Lemon Ranch Chicken sounds heavenly, too! What an awesome flavor combination. Perfect for a busy day since you can use the slow cooker! YUM!
I really love using my slow cooker in the summer. I also don’t think you can go wrong with the chicken and ranch combo! So darn good together!
I love this recipe! I just tried something similar to this in the past, and cooking chicken in a slow cooker really helps keep its juiciness and flavor. I haven’t tried it with ranch though so I’ve got to try this out!
This was delicious and so easy. My second baby is due next month so this will definitely become a part of my sleep-deprived dinner rotation.
I never cook meat in the crock pot without some sort of liquid. If you are afraid it will be dry switch the lemon slices with lemon juice. Whenever I make lemon chicken I ALWAYS use lemon juice.
