Let me start by saying, I am not a baker or a cake decorator! It’s just not my thing! I think some of it is that I have very little patience and decorating takes patience and intricate details.
A few weeks back, I tried out a fun little trick that’s super easy with these cupcakes. I used a simple yellow cake mix to make these cupcakes along with a flower cupcake holder. Then, I simply baked them according to the directions. I went ahead and added a bit more batter to each cupcake, which made 12 cupcakes instead of 24. These Wilton cupcake holders tend to hold more than a traditional cupcake wrapper.
I also used Better Batter Yellow Cake Mix to make my cupcakes, that way they were gluten free and delicious! My taste testers had no idea!
Once they were out of the oven, I simply let them cool for a few minutes. While they were cooling, I got the frosting and Wilton tips ready for decorating.
These cupcakes were inspired by my icing choices. I noticed that Pillsbury had both Pink Lemonade and Key Lime at the store and thought they would be perfect for May Flower Cupcakes! Now, these really taste like what they say too!
I was originally going to flavor my cupcakes, but the flavor from the frosting is so powerful that I felt the cupcakes were better left plain with simply using yellow or white cake mix.
Next up, all I did was use a 2D Wilton tip to make the flower, then I filled in around the edges with a small round tip and even added some decorating pearls to the center.
Are these perfect? No! Remember…I am not a decorator, but they were a blast to make! My son helped out too, so they were even better that they don’t have to be perfect. They can be made with the kids.
My son and I may have had a bit more fun eating them than making them…or maybe it was about equal.
I’m not writing a formal recipe for these cupcakes, but you should make them. Get creative and enjoy decorating cupcakes with some varieties of fun icing!
