This week’s Healthy Remix is already healthy, Slow Cooker Chicken Taco Soup. The main factor in this soup is that the beef has been replaced with Ground Chicken which is 95% lean. This is a nice healthy alternative to beef taco soup. There is also added health value in the beans and veggies in the soup. Serve these with either tortillas or baked tortilla chips and a little bit of low fat shredded cheese.
