As we start the new year, one thing I have been really working on is my diet. I’m trying very hard to add in more super-foods and take out those unhealthy food. Recently, I saw a video that showed what 200 calories looked like for different foods. It’s amazing the amount of healthy food you can eat to add up to 200 calories versus not so healthy food like butter for instance.
It was quite an eye opener to me that I could really eat a lot more if I ate better-for-me options. One way to do that is by selecting this Grilled Chicken Kale Salad for your lunch or dinner.
I absolutely love the taste of kale with a little bit of olive oil and garlic, a tiny amount goes a long way when it comes to olive oil, it gives it a burst of flavor. I like to add the olive oil and garlic just to soften up the kale a bit, if you want to add a twist, the Wish-Bone® Italian Dressing to do this..
Now, I paired it with Tyson® Grilled & Ready® Chicken too. I have to have some type of protein or meat in my salad, it’s just necessary. I almost always have the Tyson® Grilled & Ready® Chicken in my freezer too because I love to use it for quick meals when I may not have time to cook chicken. Then, I added in tomatoes, hard-boiled eggs, and a little bit of crumbled bacon.
Once I had my salad nice and prepared a little whirl of Wish-Bone® Italian Dressing and I was all set! The Wish-Bone® Italian Dressing gives it a robust flavor and is packed with herbs but there is no high fructose corn syrup, keeping my meal nice and light.
Grilled Chicken Kale Salad
- 2 Cups Kale, Chopped
- 1/8 Tsp Extra Virgin Olive Oil
- Dash of Garlic Salt
- 1/2 Cup Tyson® Grilled & Ready® Chicken, Cooked & Warmed
- 1 Hard-boiled egg, sliced or crumbled
- 1 Tsp Crumbled Bacon
- 2 Sliced Cherry Tomatoes
- Shredded Italian Cheese
- 1 Tbsp Wish-Bone® Italian Dressing
- Combine Kale with olive oil and salt. Mix this up well,
- Place the Kale in a bowl and top with the heated chicken, egg, bacon, and tomatoes.
- Garnish with a bit of cheese.
- Serve with the Italian dressing.
I had my lunch ready, plus I was able to pick up all the ingredients at Walmart. I love one stop shopping, do you? I have to say though their little girls clothes get me every single time, I can never stay on budget with my groceries because those little clothes just speak to me. They do…I’m serious.
