It’s the final days before Christmas. Are you ready yet? I hope you are, it’s coming! I’m trying to finish up a few last minute touches before the big day.
This year we are doing our family Christmas after Christmas Day so it’s a little less stressful.
I’m planning a big breakfast for my husband and kids on Christmas morning, then a light lunch or dinner with the family that evening.
We are looking forward to the Christmas Eve service and enjoying a low key holiday this year.
I’m anxious to see my kids open their presents too, my daughter is starting to understand more this year that those wrapped boxes have goodies inside!
What types of traditions do you do this time of year?
Since one of ours is a big Christmas breakfast, I thought today I’d share these Gingerbread Waffles.
How do you make Gingerbread Waffles?

If we are not having biscuits and gravy then we are usually doing pancakes and waffles. These waffles are super simple and easy to make using the waffle iron.
I typically make these with the Belgian Waffle Maker and they make about 4. Of course, I can only eat 1, so it basically serves our entire family and leaves us leftovers.
They are HUGE! If you are using a basic waffle maker they you should be able to make 8.
Are you ready for breakfast? Time to eat up! Also if you need a last minute gift, here is the waffle maker I use, Bella Rotating Waffle Maker!
