Christmas morning breakfast is a must in our house and our kids just love these Gingerbread Waffles.
These are a great option for this Christmas weekend!
It’s the final days before Christmas. Are you ready yet? I hope you are, it’s coming! I’m trying to finish up a few last-minute touches before the big day.
This year we are doing our family Christmas after Christmas Day so it’s a little less stressful.
I’m planning a big breakfast for my husband and kids on Christmas morning, then a light lunch or dinner with the family that evening.
We are looking forward to the Christmas Eve service and enjoying a low key holiday this year.
I’m anxious to see my kids open their presents too, my daughter is starting to understand more this year that those wrapped boxes have goodies inside!
What types of traditions do you do this time of year?
Since one of ours is a big Christmas breakfast, I thought today I’d share these Gingerbread Waffles.
How do you make Gingerbread Waffles?
I was inspired by this recipe for Gingerbread Waffles over on Cooking Light for these waffles.
I’m planning to try their exact recipe soon and add in the molasses; however, this time I made a simple recipe with what I had on hand.
If we are not having biscuits and gravy then we are usually doing pancakes and waffles. These waffles are super simple and easy to make using the waffle iron.
How many Gingerbread Waffles does this recipe make?
I typically make these with the Belgian Waffle Maker and they make about 4. Of course, I can only eat 1, so it basically serves our entire family and leaves us leftovers.
They are HUGE! If you are using a basic waffle maker then you should be able to make 8.

Gluten-Free Gingerbread Waffles
Gingerbread Waffles
Ingredients
- 2 Cups All Purpose Flour or Gluten Free All Purpose Flour
- 3 Tsp Baking Powder
- 1 Tsp Salt
- 2 Cups Milk
- 1/2 Cup Sugar
- 2 Eggs
- 1 Tbsp Vanilla
- 1/2 Tsp Ground Cinnamon
- 1/4 Tsp Ground Nutmeg
- 1 Tbsp Ground Ginger
- Real Maple Syrup
- Powdered Sugar
Instructions
- Combine flour, baking powder, salt, milk, sugar, eggs, and vanilla in a large mixing bowl.
- Add in the Ground Cinnamon, Nutmeg, and Ginger.
- Warm up the waffle maker and spray with non stick cooking spray.
- Prepare in accordance with the waffle maker instructions.
- Once they are all made, serve them topped with warm maple syrup and a sprinkle of powdered sugar and cinnamon.

I love gingerbread flavored ANYTHING! These waffles look so incredible. They would be absolutely perfect on Christmas morning. When I fix waffles in the waffle iron, I always make a huge batch so I can freeze some and use them for quick weekday meals. I’ll have to do that with these!

Oooh, gingerbread! My 4 year old ate his first gingerbread cookie this week and looooved it. I like that this recipe is gluten-free. I will be gradually converting my family to a gluten-free diet. Recipes like this will make it much easier.
Waffles are kind of a family staple in our home (and I totally want to invest in a new waffle iron!). Gingerbread is a new flavor for us though, we have never tried it this way. Looks fun for Christmas!
