Get ready for a delicious dinner with friends this summer with these Crispy Fish Street Tacos!

Are you enjoying your summer? We are exactly a month away from heading back to school! I’m a little surprised the summer has gone so quickly, but I have to admit that we’ve really had a great summer this year.
We have been enjoying dinner outdoors almost every single day, plus lots of swim time. These Crispy Fish Street Tacos were perfect after a long day of swimming!
This summer we decided to have my husband take his vacation in July instead of earlier in the summer. Typically he takes it around Memorial Day.
I think July may be my new favorite time for him to take off. It’s perfect because it’s later on in the summer, basically at the point that I’m running out of things to do.
That means with him off, it’s been something for us to all look forward to. I have no doubt I’ll be serving up these fish street tacos this week while he’s on vacation too!
I decided to make these in foil packs; each pack was enough for 3 street tacos. I used the street taco tortillas, which are much smaller than a traditional flour tortilla.
That means they are the perfect size to hold Gorton’s Crunchy Fish Sticks!
Gorton’s Seafood Fish Sticks are made with 100% Wild Caught Alaskan Pollock. My kids love these as is, but add some fresh vegetables with them and they are just wonderful for dinner.
I wrapped these up in foil packs with peppers, onion, tomato, and a little bit of balsamic vinegar.
Once you have them wrapped up, they can be on the grill for about 8-10 minutes on medium-high heat.
Once they are done, just add some of your favorite toppings to a street taco tortilla and top with Cilantro.
They fit right in your hand too, making them optimal for backyard cooking and eating!
I love that these taco packs make exactly 3, so it’s portioned nicely. We like to serve ours with a side of chips and salsa too.
What better way to enjoy some backyard time with friends and family?

Crispy Fish Street Tacos

Crispy Fish Street Tacos
Ingredients
- 1 Package Street Taco Size Flour Tortillas
- 12 Gorton's Seafood Fish Sticks
- 1 Red Onion Diced
- 1 Bell Pepper Diced
- Grape Tomatoes Halved
- Avocado Sliced
- Balsamic Vinegar
- Cilantro
Instructions
- Warm up the grill to medium-high heat.
- Spray a sheet of foil with non-stick cooking spray.
- Add the fish sticks, onion, pepper, tomatoes, avocado, and drizzle about 1/4 Tsp of balsamic vinegar over the foil pack.
- Wrap it up and repeat for remaining foil packs.
- Add to the grill and cook for 5 minutes on both sides.
- Serve warm on tortillas with cilantro.

We eat a lot of Gorton’s in our house. Our kids will generally only eat the sticks and breaded fillets, but we eat a lot of their grilled options as well.
