Chorizo and Egg Breakfast Tacos
We frequently have breakfast for dinner because it’s quick and easy but I tire of the usual pancakes and French toast. These breakfast tacos came about one evening when I wanted to try something a little out of the ordinary.

Chorizo and Egg Breakfast Tacos
Ingredients
- 3/4 pound chorizo
- 8 eggs
- ½ cup milk
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 8 corn tortillas
- 1 cup shredded cheese
- Salsa or pico de gallo for serving
Instructions
- Remove chorizo from casing and cook in a skillet over medium heat for 7-8 minutes or until browned and cooked through.
- Beat together the eggs, milk, salt, and pepper. Cook in a non stick skillet, stirring often until set. Heat a griddle over medium heat and cook the tortillas for 30-45 seconds per side. You want the tortillas to brown slightly and get crisp around the edges but still be soft enough to fold.
- Divide the chorizo, eggs, and cheese among the tortillas, serve with salsa or pico de gallo if desired. Serves 4.

Today, I went to the beach with my children. I found a sea
shell and gave it to my 4 year old daughter and said “You can hear the ocean if you put this to your ear.” She put the shell to her ear and screamed.
