It’s nearly summer, is it getting warmer in your area? We’ve had a few very chilly days but after the warmer than usual winter, I’m ready to just get to summer! It’s time for lake season and outdoor parties, but that also means guests coming over and sometimes it’s nice to have a little something to eat handy in case friends and family arrive. This past week, we prepared early for friends coming over by making these Angus Cheeseburgers pairing them with Creamy Potato Salad.
I happen to love potato salad, so it’s almost always in our fridge, ready to serve! We especially enjoy it in the summer time made with fresh herbs from the garden and produce as well. Now, once you pair it with a delicious burger it’s perfection! Of course, many times when guests come over, I don’t always have time to grill burgers, so the next best option is the Angus Cheeseburgers from Sandwich Bros. These sandwiches are made with 100% lean Angus beef with a slice of American Cheese.
My kids love to eat these for lunch, which works out perfectly for us especially during the summer months. I love to go outside with them and let them eat on the patio and play while enjoying a good book. Can you see why I’m so ready for summer? It’s time for it to get here. I don’t have much longer though, our schools are out next week! Then, it’s backyard eating and playing for the kids while I get some much needed down time.
I make the potato salad ahead of time and have it ready to go, then all I need to do is heat up the Angus Cheeseburger Sandwiches and lunch is ready. I can easily make these while the kids play outside in the backyard because it literally takes less than 5 minutes from start to finish. That’s my kind of lunch! It’s a good way to get a boost of energy and nutrition, then hop back in the water for more fun!

- 2 Lbs Red Potatoes, Boiled
- 4 Green Onions, Thinly Sliced
- 1/4 Cup Chopped Celery
- 1/4 Cup Chopped Fresh Dill
- 2 Tbsp Sweet Relish
- 2 Tbsp Dijon Mustard
- 1/2 Cup Original Philadelphia Cooking Creme
- Salt/Pepper Optional to Taste
- Once the potatoes have been boiled, cut them into small cubes for the salad.
- Place them in a large bowl, then add in all remaining ingredients. Stir up the ingredients coating the potatoes.
- Cover the bowl and let it chill in the fridge for 2-3 hours then serve.
