Slow Cooker Apple Cider Pork Loin is a great choice for dinner!
As the holidays pick up, my time in the kitchen is very important. I feel like most of my time is spent there, but it’s usually on treats. The only problem? We still need to eat a good dinner too! This past week, I decided to take one of my all time favorite recipes for Glazed Cider Carrots and adapt it to a slow cooker for this Slow Cooker Apple Cider Pork Loin.
The smell was beautiful as it drifted through the air. Apple Cider is just a sign of the season, at least for me, so making sure it’s used in a variety of meals is necessary this time of year.
I was able to prep my slow cooker the night before, then I could easily get it turned on in the morning. I just started about a month ago waking up before the sun to go workout in the mornings. It’s quite a workout too. This is the type of workout I’ve never done in my entire life before and there was a time that I worked out daily. I feel so much better though after going to these classes, that I don’t really want to ruin my great workout with not so great eating habits.
This pork loin can also be seared prior to adding to the crock pot if you prefer a more crisp, darker look. I decided to simply cover it with the apple cider and onions, then I let it cook all day long. It was simple to shred and taste great as is or on top of a stuffed potato too, if you want to get real creative put it on top of a stuffed sweet potato. Delicious!
