A few weeks ago, we started ordering produce from a local co-op in town and it has led me to so many quick and easy recipes. I love that with the co-op I never know what I am going to get. I enjoy the challenge of finding recipes to pair the produce with. We also order meat packs each month from a butcher shop in town so although I do know the types of meat I’m getting, I like to mix and match some of it.
We are trying very hard to scale back our food budget each month, so far ordering the produce from a co-op and soon we will also have our garden produce too then the meat pack is helping do just that! Now, if only I could stop going to the grocery store when I’m hungry!
This past week though I had a bunch of produce that I wanted to use up, plus some Ground Italian Sausage in my freezer. I am also watching my calories closely, so I wanted to do a skillet style meal that would just be basically meat and veggies with a wonderful flavor.
This was it!
To make this Italian Sausage Skillet all I did was mix a little garlic and olive oil together to simmer with the veggies, then I added in cooked Italian Sausage. Easy Peasy!
We added green peppers, sweet onion, and tomato to our skillet. This would also be great with a poached egg on top similar to this Sausage and Egg Hash.
Time for a quick dinner tonight, this is a great one to make this summer too with fresh garden produce.

Italian Sausage Skillet
Ingredients
- 1 Lb Italian Sausage Cooked & Drained
- 2 Tbsp Olive Oil
- 1 Garlic Clove Crushed
- 1 Green Pepper Diced
- 1 Roma Tomato Diced
- 1/2 Cup Sweet Onion Diced
Instructions
- In a large skillet, cook and drain the Italian Sausage if you have not already.
- Pour the oil in a skillet and heat to medium heat.
- Add in the crushed garlic and veggies, let this simmer for about 10 minutes or until soft.
- Add in the cooked sausage and mix with the veggies, let it simmer together an additional 10 minutes.
- Serve Warm.
