If you love a good salad then you must try these Eat Smart Gourmet Vegetable Salad Kits and the Ginger Bok Choy Salad!
I’ve got a new obsession with Eat Smart Gourmet Vegetable Salad Kits, have you tried them yet? Let’s get right to it, these salad kits come in 7 different varieties and each one has 5 or more super-foods! They also have several that are gluten-free too. I decided to try out the Ginger Bok Choy Salad for my husband and show him just how to make this versatile for his lunch each day.
Eat Smart Ginger Bok Choy Salad Kit is bursting with fantastic flavors from the Far East and is absolutely delicious. It is packed with six superfoods that include sugar snap peas, carrots, Napa cabbage, broccoli, Bok Choy and red cabbage, plus peanuts and a ginger sesame dressing.
1. Ginger Bok Choy Mason Jar Salad
I have been urging my husband to make smarter choices when it comes to food as I myself am doing the same. One struggle for him is lunch. He’s either at work in the office or driving a truck, so how do you keep a salad tasty and delicious all day?
The mason jar salad of course! I showed him just how simple it is to create a Mason Jar Salad. We put the dressing on the bottom, then added the salad and the peanut to it. If you want to get a little more creative, you can even add hard-boiled eggs and additional toppings.
2. Ginger Bok Choy Wrap
Now the other way I was anxious to show him is in a wrap. Building a wrap is so simple with these salad kits. We added ours to a corn tortilla; however, you can add it to a flour one as well. Then, add the salad contents and the peanuts.
Then, I decided to add a little grilled chicken too. Once our wrap was filled, we drizzled a little dressing on it and wrapped it up. If you are planning to eat it at lunch time and make it earlier, then just save the dressing until you are ready to serve it.
3. Ginger Bok Choy Salad
Of course, lastly you can serve it right in the bowl topped with the toppings and dressing. The salad is so full of wonderful super-foods that really no additions are needed unless you are in the mood to add a little more.
One thing I love to top salads with lately is grilled chicken and dried fruits. This would be great with some dried fruits as well.

Ginger Bok Choy Wraps
Ingredients
- Eat Smart Ginger Bok Choy Salad Kit
- 1/2 Cup Shredded Grilled Chicken
- 2 Corn or Flour Tortillas
Instructions
- Add the contents of the salad and the chicken onto the tortillas.
- Top it with the peanuts and the dressing.
- Wrap and serve.
