Add the dry ingredients to a medium sized bowl, then mix in the wet ingredients until your batter is formed. Add additional milk if needed if it is too thick.
Once your batter is formed and the griddle is coated with non-stick spray if needed, add about 1/3 cup of pancake mix
Cook for 4-5 minutes or until golden brown, flip and cook an additional 2-3 minutes.
Serve with warm maple syrup and blueberries or toppings of choice.
