Ingredients
1French Baguette or Gluten-Free Baguette
4TbspExtra Virgin Olive Oil
3Roma TomatoesSliced
1/2CupChopped Italian Parsley
1/4CupChopped Basil
1CloveGarlicCrushed
1TbspGrated Parmesan Cheese
1TbspBalsamic Vinegar
1TspSalt
Instructions
Preheat the oven to 350°F.
Slice the bread about 1/4 of an inch thick and place it on a greased baking sheet.
Using 2 Tbsp of olive oil, brush each piece with the olive oil.
Bake for 8-10 minutes or until slightly golden browned.
While this is baking, combine the remaining oil, tomatoes, parsley, basil, garlic, cheese, balsamic vinegar, and salt into a medium-sized bowl and stir or mix well.
Once the bread has been removed from the oven, top each piece with the bruschetta.
Serve.
Notes
This can be served with crackers or pita chips as well.
