Ingredients
2PoundsBoneless, Skinless Chicken Thighs
1CupBarbecue Sauce
1CupPineapple Chunks with Juice
2TbspGluten-Free Soy Sauce
1TbspBrown Sugar
1TspGarlic Powder
1TspOnion Powder
1Red Bell Pepper, Diced
1Green Bell pepper, Diced
1/4CupSweet Onion, Diced
Instructions
Add the chicken to the slow cooker.
Top with garlic powder and onion powder.
In a small bowl, mix together the barbecue sauce, pineapple chunks with juice, soy sauce, and brown sugar.
Pour evenly over the chicken thighs.
Top the sauce with diced bell peppers and onions.
Cover and cook on LOW for 8 hours.
Shred the chicken in the slow cooker and stir it into the sauce to coat.
Serve with cooked rice or green beans and add the sauce or juice from the slow cooker over the dish.
